Easy Chicken Taquitos

Substituted homemade shredded chicken seasoned with cumin, garlic and salt, and flour tortillas because I didn't have corn. No hot sauce (for the kids' sake). Very good.

Caramel Coconut Brownies

This recipe could have been really great...if it wasn't so awfully sweet. As it was, I reduced the sugar by 1 cup, used unsweetened coconut, didn't add the chocolate chips, and added 3/4 cup toasted pecans, and didn't put the topping on afterward. It was still almost inedible, except with a strong cup of coffee. The flavor was good (especially with the addition of the nuts), but I suspect 1.5-2 cups of sugar would be plenty. If you're going to add the chocolate chips, I wouldn't put that many and I'd try to use dark ones to cut down on the sweetness. They are nice and gooey, however.

Chewy Coconut Bars

This is a blondie. I make them with unsweetened coconut (all I can get in Zimbabwe) and pecans. Don't over bake. They're nicest when they're chewy.

fabulous recipe - good flavour (a little bite, but not too much) and good consistency (firm and chewey, but not hard). i found the cookies were not that difficult to roll out, as long as it was chilled enough and everything was well-floured. i made gingerbread men, and with the scraps (which were too soft to re-roll and cut) i rolled them into balls and used a sugared glass to press them down.

Like other reviewers, I also added cardamom, opted out of the orange peel, and cut the sugar. I also like adding a vanilla bean to the mix (if rinsed and refrigerated in a sealed ziploc baggy, they are reuseable!).

Passover Chocolate Torte

Great cake - everyone loved it, though I did not make it for passover, so I used butter. I also substituted dark chocolate chips for the semi-sweet chocolate and decreased the sugar slightly. Served it with homemade coffee ice cream.

Almond Cookies I

The reviews about doubling the almonds were right on. I also substituted toasted hazlenuts in one batch (still used the amaretto, but did not use the almond flavoring). I've also made them with a bit of orange glaze on top - very tasty.

Outrageous Chocolate Chip Cookies

Great, versatile recipe. I added a handful raisins and some 3/4 c chopped nuts to my double batch. Should have made a triple batch, they went so fast. Only change I would make to the recipe is to cut the sugar by a 1/4, which I do with most of my baking anyway.

These are the best granola bars ever! I'm not sure if they dry out over time because they never seem to last long enough. I have yet to follow the recipe exactly, but that seems to be okay. I've substituted rice crispies for the Grape Nuts, and 10 grain cereal (the kind that makes hot cereal), and I used dried cranberries and strawberries, and a handfull of chocolate chips.

Soft Chocolate Chip Cookies I

These cookies were pretty good, but a little on the bland side; I doubled the vanilla, but they still lacked something in flavor. Texture was great, though. I followed the recipe exactly, except that I melted the shortening (until 1/2 liquid, 1/2 solid) and the brown sugar together in the microwave because it helps disolve the sugar and gives a finer texture to the cookies. Perfect at 9 minutes.

Best Lemonade Ever

I love this lemonade recipe. I do cut the sugar down to 1 cup, however, because it's a bit sweet otherwise. I have also substituted limes, as well as using club soda to make sparkling lemonade or limeade. It's been a hit all summer. Addendum - I had a half pint of strawberries that needed to be used so I blended them with ice and a bit of water until they were smooth and added them to the lemonade - best strawberry lemonade I've ever had!

Chicken Makhani (Indian Butter Chicken)

This was a great recipe! I was making it for my grandmother, who doesn't do spicey, so I omitted the cayanne and it was still good. Also substituted sour cream for the yogurt. Will definitely make again.
