Rich Italian Sausage and Potato Soup

I found a similar recipe on another web search after visiting Olive Garden (difference was chicken broth instead of bullion, ground italian sausage instead of links and some tweaks to measurements). My son said it was "right on the money" with Olive Garden's except for the spicyness. I didn't add red pepper because I'm not found of really spicy things and wanted to try it. Next time, I will add more red pepper to spice it up. This is definitely a keeper!

Rosemary Ranch Chicken Kabobs

Oh, my! This is wonderful! I used it to marinate chicken and top round steak for kabobs. Let these marinate overnight and fixed them for Father's Day lunch. My family absoltely loved them! Will definitely do these again!

New Orleans Barbequed Shrimp

My family loves this shrimp! I don't eat shrimp but it sure doesn't take long for my boys to scarf it down. I do add Old Bay (just doesn't seem to be seafood without Old Bay) and reduce the lemon juice to 1/2 Tbsp. I'm going to try it in the crock pot as another reviewer suggested.

Pasta Melanzana

I only gave this 4 stars simply because my family doesn't care for eggplant. However, using zuchinni works very well. I also added onion and used the parmesan/romano mix. I reduced the lemon juice to 1 tbsp (3 was too strong for me). I'm going to try adding chicken or shrimp and see what happens!

Lemon Cake

Absolutely delicious! I fixed this for a July 4 cookout (using lemon pudding in the cake and icing) and had lots of rave reviews. I made it in a 9x13 sheet pan and the texture was great. I wasn't able to find the smallest pudding packages so I just used half of a regular box in the icing. Definitely a keeper!

Buffalo Chicken Dip

This recipe is very much like one I found a couple of years ago in the coupon page (ad for canned chicken). When I made it, I mistakenly used habanero sauce instead of hot pepper sauce (I didn't know the difference) and it was FIERY HOT!!! My brother-in-law was the only one that could eat it! Since then, I've used the habanero sauce but greatly reduced the amount. It always gets rave reviews and I never have leftovers to bring home. Also great with Triscuits.

Meatloaf that Doesn't Crumble

I was surprised to see no eggs in this recipe but my son (who hates eggs) was very happy. I didn't use green pepper (not fond of it) but otherwise followed the recipe using sausage with sage added instead of adding the sage. True to it's name, it didn't crumble!

French Dip Sandwiches

This is one for my files! I followed the recipe exactly and served the shredded beef on french rolls. I strained the juices to remove the fat (I used an ingenius method of placing thick papertowels in a strainer and the pouring the juice in--may sound strange, but it worked!). The 3 lb. roast was not enough for my family of four to have leftovers, though.

Sauteed Apples

I made these apples to bring to a breakfast at work. It received rave reviews! I used MacIntosh apples and doubled the recipe. I cooked the apples the night before and put them in my slow-cooker to reheat. I couldn't find the cinnamon chips one reviewer mentioned but will continue to look for them. All in all, this is definitely a keeper!
