Kingman's Vegan Zucchini Bread

This is super delicious. It is better than any non-vegan zucchini bread that I've ever tried. I left out the flax and arrowroot and it was just fine.

Cabbage, Potato and Baked Bean Soup

Sorrel Soup

I could not believe how good this soup was! I even substituted 3/4 c. of rice milk and 2 T. of butter for the heavy cream, and it was still so creamy. I've never had sorrel before and now have requested more from my farmer's co-op. Thank you!!

Chicken Cilantro

I made the vegetarian version of this recipe and made some changes overall. I used Quorn brand naked cutlets, lemon-infused olive oil instead of veg oil, and cooked the rice with veg bouillon in a rice cooker (no hominy). Both my husband and I thought this was very tasty.

Swiss Oven Omelet

I made this Christmas morning and it was liked by everyone. I cut down the dijon to 1 tsp (my mom does not like spicy mustard), and also used about 1.5 cups of red onion instead of 2. I omitted the green onion because I didn't have any on hand. My dad is a huge meat eater and didn't miss it at all. Thanks!

Okra Gumbo

This was good. The only reason I didn't give it five stars is that it really does need some liquid in the recipe. I added about 1 cup of vegetable broth. I also substituted fresh eggplant for the okra and omitted the powder. It was still delicious.

Sweet and Spicy Sweet Potatoes

Very tasty! I've used this recipe twice now: one time with sweet potatoes and one time with yellow-skinned potatoes (skins on). The latter instance I substituted smoked paprika, which was just awesome. Thanks!

Monterey Spaghetti

Good side dish. I made on Thanksgiving and most everyone commented that they liked it. I halved the amount of cheese and substituted non-dairy sour cream and it still tasted fine.

Peanut Butter Noodles

Mock Tuna Salad

Holy Deliciousness! I've made chickpea dips a million times and never thought to put some mayo and mustard in it. It really is reminiscent of tuna salad. I substituted Miracle Whip for mayo and it was fab. Thanks so much!

This recipe is good, but more for kids. I wouldn't say it is much different from normal goulash. I used veggie crumbles and it still worked fine.

Green Tomato Cake

Good recipe. My family was suprised it was made with green tomatoes! I used a previous reviewer's suggestion and chopped the tomatoes in a food processor, only using 2 cups.
