Apple Crisp II

I cut the apples in chunks, mixed them with the sugar, flour, and cinnamon, added 1/4 tsp nutmeg, omitted the water, and doubled the topping. DELISH!

Sunburst Lemon Bars

These were phenomenal! Easy to make and absolutely delicious. I followed the pointers from other reviewers - using chilled butter and for the filling I used 4T of flour, 1/2 tsp of salt, and 1/2 tsp baking powder, and beat for 5 minutes. I added more lemon juice than was called for, since I like my lemon bars lemony. I skipped the icing, since I'm not a big fan and just put conf. sugar on top. These were so good, it's ridiculous!!

Mini Pineapple Upside-Down Cakes

These were pretty good, but a little messy to make. When I tried inverting them, pineapple juice got all over the place. They were a huge hit though.

Twice Baked Sweet Potatoes

Pretty easy to do. I read some of the reviews and didn't wrap the potatoes in foil, just let them bake. It took about an hour at 425. I only had one peel that was a casualty, so I put the filling in a ramekin instead. Came out just as good. These were pretty simple, with a great taste.

Peanut Butter Cup Cookies

There is nothing I didn't like about this cookie. It was a huge hit at my cookie exchange and they were so easy to make. These are my new favorite cookie! (I do recommend making them in the muffin tins - I think they come out a little better)

Santa's Chocolate Thumbprint Cookies

This was one of the easiest cookies I have ever made. They were also really delicious. They are my new favorite cookie to make! I omitted the cherry on top as I thought it would be a bit much.

Three Cheese Baked Mashed Potatoes

These potatoes were delicious and a big hit!! I didn't do the American cheese though and just added extra cheddar. I also used real bacon and nixed the onions (just b/c I'm not a fan of onion). But the topping was a HUGE hit.

Aloha Chicken

After reading the reviews, I modified the recipe and used garlic powder instead of salt, and also halved the amount it called for. I also used about 1/4 cup of ketchup and basted for 5 minutes and cooked for 10. After these modifications the dish was delicious. I also served it over rice, which added some flavor. I did have extra sauce left over, which may make a good marinade.
