Sam's Famous Carrot Cake

I made this cake for Easter; it was my first try at making a carrot cake and everyone absolutely loved it! Definetley the best I've ever had. The only thing I did differently was omit the raisins and coconut, added an extra 1/2 cup of carrot and threw in a little nutmeg. It was awesome!

Whit's Chicken Enchiladas

Awesome recipe! The only thing I did differently was add some pepper jack cheese to the cheese mixture to spice it up a little; I also added just a dash of crushed red pepper. I have made this twice now and had the best compliments! I definitely recommend this recipe!

Apple Crisp II

Awesome!! I made it for the 2nd time tonight! The first time I made this it was for a dinner party and everyone loved it! My husband is not a fan of anything with fruit and he asked me to make it again so I did tonight. I will be making this many more times I'm sure. I took the advice of some of the other ladies who posted reviews; I doubled the topping so I had a layer at the bottom and on the top of the apples, I cut the sugar in half and omitted 1/2 cup of the flour in the topping. The first time it was just a little too dry, but now it's absolutely perfect!!

Manhattan Meatballs

These were a huge hit and the first appetizer gone at a Christmas party I went to this year. The only thing I did different was use apricot preserves because I couldn't find the pineapple at my grocery store...oh, and I added some brown sugar to the sauce! Will definetley make these again.

Beth's Spicy Oatmeal Raisin Cookies

I have made these twice now. The first time I used all butter and they were nice and soft and very chewy (only leave in the oven for 9-10 minutes at the most)and delicious!! The 2nd time I made them I took the other's advice and omitted the cloves for all spice added extra cinnamon and used a 1/4 cup butter flavored shortning because I was a 1/4 short on butter and the cookies were totally melt-in-your-mouth delicious!! I think the 1/4 butter flavored shortning made the difference in the melty-ness and buttery flavor! I will continue to use this recipe over and over again...it's a winner!

Cream of Mushroom Chicken

Super fast and easy recipe. The only thing I did different was add minced, fresh garlic and fresh mushrooms instead of canned. My husband LOVED this and I will definitely make it again!

Basil Chicken over Angel Hair

This recipe was awesome. My husband is not a fan of "healthy", but he loved this! I changed a few things...1) sauteed mushrooms in balsamic vinegar, garlic and olive oil and added it toward the end 2) diced one fresh tomato and added one can of diced tomatoes in balsamic, garlic and olive oil (hunts)3) added thyme and lawrys seasoned salt. It was excellent and even better the next day! Definetly NOT dry or bland.

Eagle Salad

This was a simple yet tasy recipe! Great for a quick lunch (and leftovers the next day). I took another users tip and left out some of the onion; I added some diced black olives, celery salt and salt and pepper to taste! I think it would have been a little bland without the celery salt and pepper...but overall a good recipe! I'll definetley make it again.

Blueberry French Toast

This was a really great recipe, but I defintely agree with some of the other reviews to omit a few eggs. I used 9 and next time I make this I will probably use 8 instead. The cinnamon is a MUST! Since quite a few people said it was a little bland and the sweetness came from the sauce, I added sugar with the cinnamon on the first and second layer of bread crumbs. I also cut back on the cream cheese using only 8 oz and added vanilla and extra maple syrup to the egg mixture. It was awesome when all was said and done, but like I said, next time I would still cut back on the eggs even more. I made this last night for christmas breakfast this morning and it was a hit. 12 servings was more like servings this morning so do be scared to double up the recipe if cooking for more than 12.

Jalapeno Popper Spread

My husband made this recipe for a super bowl party we went to. It was awesome!! Even a picky 8 and 11 year old ate it and loved it. Keep in mind we kept the "kick" of the jalapeno pepper to a minimun since we knew there would be kids, but it was a winner. He added bread crumbs with the parm cheese and backed at 350 for 20 minutes. Will make again for sure, but this time we'll kick up the "bam" factor with more Jalapenos
