Mushroom Bolognese

Delicious! I was looking for a meatless sauce that tasted something like a classic Bolognese, and this definitely did it for me. I didn't have enoki mushrooms so I increased the amount of portobellos. I also had to substitute ketchup for tomato paste and fat free half and half for heavy cream. I don't think it made a difference in the taste. I don't think this makes enough for 6 servings. Three seems more likely. All in all this is a delicious and easy meatless sauce.

Healthier Cheesy Ham Potato Bake

Wonderful, tasty recipe! I was looking for recipe for leftover ham, and one where I had all of the ingredients. This fit the bill and more. My husband, who normally doesn't like casseroles, and hardly comments on recipes said, "This is delicious!" after the first bite. I had to take the casserole away so he wouldn't eat more than a second helping! The chicken soup and sour cream make for a delicious creamy sauce. The only changes I made were to omit the butter and the added salt -- the dish doesn't need it -- and used low fat cheese and low fat sour cream. This decreased the amount of fat and cholesterol. I'll be making this again! Thank you mambear for submitting.

Easter Breakfast Casserole

CB, I had to give your redone recipe 5 stars! I don't think I'll be trying it any time soon, but I can't remember enjoying reading a review as much. I will be passing along your recipe to all of my foodie friends.

Healthier Slow Cooker Chicken Stroganoff

Delicious and easy. It uses ingredients that most people have on hand. I cooked the chicken for four hours on slow, then added the remaining ingredients and cooked the dish on high for thirty minutes. The chicken was cooked through, yet very moist. My husband, who usually needs to be prodded about what he thinks about a dish said, "This is really good!" after the first bite. A definite "keeper."

Whole Grain Florentine Egg Cups

Delicious "change of pace" for breakfast! I had fresh basil from the garden so I substituted that for the spinach. It worked out very well. I really liked the crispy "cup" and the soft, flavorful egg mixture inside. The egg cups looked as good as they tasted. I feel that most people will eat 2 egg cups (rather than 1) for a serving. Will be making again.

Fast Salmon with a Ginger Glaze

Excellent! I used wild caught Coho salmon. I used the suggested grilling time rather than relying upon the color of the cooked fish. I'm so glad I did. The fish was so moist and tender. I boiled the glaze down a bit more than recommended because I like an intense flavor. It was excellent. I have never received higher marks for any dish. This will be a "company" dish, as well as a special treat on a regular day! Thank you Chef.

Ginger Sesame Salmon

This is an excellent recipe -- quick, easy, yet worthy of company. I didn't have salmon so I substituted large white fish (swai) fillets. As a result, I did have to increase the cooking time. Despite that, the fillets came out very moist and were very flavorful. I also didn't make individual packets, but wrapped and sealed all of the carrots and fish I was preparing in one foil-lined pan. The meal is colorful and healthy. It is a very versatile and "forgiving" recipe that I will definitely make again. Thank you for sharing.

Broiled Parmesan-Lemon Tilapia

Excellent recipe! My husband does not like fish but he came back for seconds and thirds. I did substitute Old Bay for sazon seasoning, and I had to broil the fish for a few more minutes at the end to get the golden brown coating. The fish was moist and very flavorful. A definite keeper! Thank you.

So easy and so delicious! I was initially hesitant about using uncooked noodles but they come out perfectly. The spinach gives the dish a nice texture and color, and is a good alternative to the traditional meat lasagna. This has become a family favorite.

Nancy's Boiled Gazpacho

This is the old Betty Crocker recipe that I made for decades until I had to throw the book away when it was finally falling apart at the seams. I always reduced the vinegar by one half due to the overall acidity. The recipe scales very well and lends itself to reducing or increasing the fresh vegetables, based on your tastes. Crisp croutons are a good final addition at the table. Thank you for bringing back the best gazpacho recipe I've ever made.

Chinese Pork Tenderloin

Excellent! I marinated the meat in a sealed plastic bag for 6 hours and then baked the tenderloin in a foil lined glass dish for 30 minutes, letting the meat sit before slicing. The pork was so moist and tender. The marinade, which formed a thin glaze on baking,imparted a delicious oriental flavor. I served it with my home version of fried rice. No leftovers! I'll definitely be making this recipe again. Oh, and did I say that it was so simple to make and there was no cleanup!

Creamy Goat Cheese and Honey

Excellent! I wanted to get a quick idea of the taste of the recipe so I simply spread some goat cheese on crackers and sprinkled the ingredients over the cheese. The taste was wonderful and the ingredients balanced each other out beautifully. I will definitely follow the recipe for a better presentation for guests! However, this quick "taste test" shows how simple, forgiving and versatile this recipe really is.

Hot and Sour Soup with Bean Sprouts

Excellent soup -- flavorful, filling, yet light. It's a great alternative to the thick hot and sour soups that have meat in them. It was also fast and easy to prepare. My husband, who spent years in the Far East loved it, as did I. I didn't have all of the ingredients, but given the great taste, I think this recipe is very versatile and forgiving. This is a definite "keeper" in our recipe box! Thanks for the recipe ReddPanda.

Healthier Chuck's Favorite Mac and Cheese

I was a bit skeptical when I saw the ingredients, but I wanted a healthier version of a family favorite. Not only is this recipe a healthier version of traditional mac and cheese, it's delicious! The second time I tried it I omitted the topping, reducing the calories and fat/cholesterol content even further. It wasn't missed. I also added a little bit of skim milk to make the sauce even creamier.

Cheese Crepe Souffle

This is a delicious recipe that lends itself to many personal variations. For example, I used cherry blintzes, and substituted low fat sour cream and sweetener. The only change I really had to make was decreasing the baking time. In a convection oven the dish was definitely ready by 30 minutes. I would recommend anyone trying this recipe for the first time to watch the oven. Thank you for a wonderful recipe that I will incorporate into my Sunday breakfast menu.

Stir-Fried Chicken With Pineapple and Peppers

This was an excellent recipe with a few modifications. The recipe did not say what to do with the pineapple juice so I added it to the sauce ingredients and doubled the amount of cornstarch. Also, I added the sesame oil to the sauce as a seasoning, not as an oil for stir frying. Sesame oil is too delicate and not a suitable oil when using high temperatures. Finally, I cut the chicken in thin slices instead of 1 inch pieces. The slices cooked quickly and provided more surface area for the sauce to coat. The results were delicious! I will be making this again!

Hoisin Pork Stir Fry

This is a very good recipe, but I would double the amount of hoisin sauce. I could barely taste it in the original recipe. Also I would suggest stir frying the meat and the vegetables separately, then reheating with the hoisin sauce mixture. Will make again.

Ginger and Rosemary Pork Marinade

The pork chops came out so tender and juicy. The reason I gave it a "4" is that the lime was overwhelming. It may have been that I marinated the pork cutlets for too long -- about 6 hours -- or that I was using a thin cut. Next time I will either cut down on the time or use it on a thicker cut of meat. This is a keeper, especially for those looking for a low calorie way of preparing a different tasting, flavorful pork recipe.
