Soft Chocolate Chip Cookies II
The only change I made to this recipe was that I used a whole cup of butter, not half butter and half shortening. Other than that, I followed the directions to the letter. I'm telling you, I've been looking and looking for the perfect chocolate chip cookie recipe and THIS IS THE ONE. I will never bake them any other way as long as I live. Wow. Simply divine. Thank you!

Roasted Chicken with Risotto and Caramelized Onions
This dish tasted great. The best part, in my opinion, is the caramelized onions! What a great flavor with the risotto. One thing I'd suggest is, don't add any salt at all. I added about 1/2 teaspoon of salt without tasting first, and it definitely was not needed. I nearly ruined it. Thanks for a great recipe!

Creole Mexican Catfish
I'm sorry, neither my husband or myself enjoyed this dish at all. It was easy to prepare, but it didn't seem like there was enough seasoning to coat the fish. The directions say to put the fish in the seasoning dish; I had to literally take pinches of the seasoning and sprinkle it on the fish to make it last. And the fish ended up being way, way, way too spicy. My husband and I enjoy spicy food, and we had to scrape the tomatoes and the spices off the fish to make them edible. It was like fire in our mouths. I won't be making this again.
