Roasted Red Pepper Soup

This soup was great! It would be great as just a plain soup too. I roasted my own red peppers, and guessed by using 4. It wasn't nearly enough, so I reduced the other ingredients. I'd probably try 7 peppers next time. I'll definitely make it again.

Tomato Pepper Sauce

This was great - it tasted so fresh. I didn't have an onion, so I just used some onion powder. I also added some basil, parsley, and rosemary from my yard.

Goat Cheese Stuffed Tomatoes

These were great! I used huge tomatoes and made this as our main course, but neither my husband nor I could finish them. I roasted my own red pepper and added some extra into the goat cheese mixture, as well as some torn basil.

Serbian Ground Beef, Veggie, and Potato Bake

This was really good! I recommend it for a winter night, not a warm one like I made it for! :) I reduced the ground beef and added potatoes. Next time, I will add more veggies and decrease the red pepper flakes, as it was a bit spicy for me [update - used a pinch the second time and still too spicy...will leave out next time...update #2 - it's apparently the black pepper quantity that is killing me]. Also, I cooked for 40 minutes, with the foil off for the last 5.

This was great! I don't love pears but needed to use some, so this was a great use. I used 3 pears and 3 apples (sliced) with a little extra flour, and it turned out quite well.

Ghirardelli® Dark Chocolate Cupcakes

These were really good. It makes 16 cupcakes in paper liners for me. The frosting seemed like it wouldn't be enough since I wanted to pipe it, so I added confectioner's sugar. I kept adding more and more (1/2 a big bag) to get it to a decent consistency. Then I had too much of course. It would probably be good to either let the frosting sit as described or use a different frosting recipe.

Green Sauce Enchiladas

This was tasty. I marinated the chicken in lemon juice with some s/p, chili powder and cumin, cubed it, and sautéed it. I added some bell pepper and extra corn to the mix. I used 12 corn tortillas, making 2 square pans, and I probably had 1/3 of the mix left. I might try flour tortillas next time because the corn tear up so badly, some in assembly, but mostly when serving. I also would lightly grease the pan next time.

Spinach Lasagna III

This was great. I used way more spinach and upped everything a bit to make two smaller pans. Update: Doubled the recipe to make 3 square pans. Used more spinach (sauteed with onions) and 4 C ricotta because that's how it came at the grocery. In one pan, I did the full 3 layers, ending with cheese. In the other two, I did only 2 layers of the spinach mixture and topped the final noodles with sauce (used 2 jars). It would have been nice to have the 2 extra C ricotta to make the final layers on the other two.
