Pizza Dough III

Just made this pizza dough recipe and it's very good - will definitely be a go to recipe. I mixed by hand and added just a bit more flour as I was forming the ball. I did a cold fermentation in the refrigerator overnight for a breakfast pizza. Oven 525 with a stone and a bit of cornmeal on peel. Was the easiest dough to roll out that I have ever made. Baked up beautifully and everyone enjoyed.

Orzo and Tomato Salad with Feta Cheese

Made as described except for using 1 1/2 tsp dried dill as that is what I had on had. Delicious. Watch adding salt as olives and feta already are salty tasting. I think it would be great with some large boiled shrimp added in!

Lamb Chops with Balsamic Reduction

We absolutely loved these. They were easy to make - too easy for such great taste! I did not have quite enough balsamic vinegar so I used red wine to make up the difference. My chops were about 1 1/4 inch thick and I cooked them 4 minutes per side - for a perfect medium rare. Served over mashed potatoes. Excellent!

Hot Tamale Pie

This is a great recipe. Adaptable. I halved everything and used a deep dish pie plate. It cooked in 30 minutes. I was out of corn. Used green pepper for poblano and added onion. My meat was precooked - leftover from another dish earlier this week - it was half chorizo and half beef. The corn bread added a sweetness, the chipotle pepper a smokiness and the chorizo a little spice. It was good and simple. We will make again - hope to have corn and poblano on hand - but this recipe is perfect for a wide variety of Tex-Mex type ingredients that you may have on hand.
