I actually changed the recipe a bit. Instead of tomato juice--it has too much sodium, I used a box of Parmalat crushed tomatoes. I used a box of Parmalat tomatoes instead of fresh tomatoes. In order to thicken the soup, rather than using cream, I boiled two potatoes and then pureed them with the soup. It wasn't necessary though because the soup was already thick. Next time I make it I will use the Parmalat crushed tomatoes instead of the juice, fresh tomatoes and won't use anything to thicken.
