Grandma Johnson's Scones

I made these for Christmas breakfast and they were fantastic!! I am going to make them again today so I can have them around for breakfast and tea. I like the soft texture. I did not use cream of tartar (couldn't find it) so I substitute baking soda and powder for it. I made some plain ones and some with raisins. They are great just plain with butter or jam. I have never had a scone this good. The ones you buy in the coffee shops and supermarket are usually hard and taste like dust. Way to go, Grandma Johnson!

Rich and Creamy Tomato Basil Soup

I actually changed the recipe a bit. Instead of tomato juice--it has too much sodium, I used a box of Parmalat crushed tomatoes. I used a box of Parmalat tomatoes instead of fresh tomatoes. In order to thicken the soup, rather than using cream, I boiled two potatoes and then pureed them with the soup. It wasn't necessary though because the soup was already thick. Next time I make it I will use the Parmalat crushed tomatoes instead of the juice, fresh tomatoes and won't use anything to thicken.

French Breakfast Puffs

I tried this recipe and I didn't really like it. I didn't have any milk so I used half and half--that might have ruined the recipe. The taste of these was just strange.

Fresh Southern Peach Cobbler

I baked this peach cobbler yesterday for a dessert for lunch and it was delicious. It came out perfectly. The only thing I would say is that it is MUCH more than 4 servings, more like TEN! I served it with homemade cream (heavy cream and confectioners sugar). I also made slight moderations. I used SPLENDA instead of the sugar (except for the sugar cinnamon topping--I used real sugar for that). I also didn't have any cornstarch so I threw in a couple of spoons of confectioners sugar to thicken it and that worked fine. Overall I cut the calories on this with the SPLENDA but you sure couldn't tell! It also seemed to work fine in glazing the peaches and in the crust.

To Die For Blueberry Muffins

I tried this recipe two years ago because I had bought a huge box of blueberries. The muffins came out delicious. My roommates all raved about them and they looked and tasted better than a muffin you would by at a bakery or cafe.

Chicken Marsala

Chocolate Mexican Wedding Cookies

Cranberry Orange Cookies

This is the third year I have made these cookies. By mistake this year I bought sweetened cranberries and the cookies turned out okay but I prefer fresh cranberries--the tartness is an outstanding contrast to the orange. Last year I used dried unsweetened cranberries. By far my favorite is with the fresh unsweetened cranberries which I will make sure I use next year!

Apple Hermits

This is the third and BEST year I have made these cookies. They just keep getting better and better. This year I used organic cinnamon and brown sugar and what a difference!! I recommend all organic ingredients. (I didn't use organic flour but everything else).

Roast Chicken with Rosemary

I have roasted LOTS of chickens in my life, but this was the BEST I have ever made. The only thing different than the recipe, was that I had a 7 lb. roaster so I used double the ingredients, and I also melted some butter and added the salt and pepper, and part of the rosemary to the butter. Then I basted the chicken with this under and on the skin. The chicken came out JUICY and the skin was crisp. In the past I have used lemons in the cavity but the meat was not as juicy as with this recipe. I think it must be the FRESH rosemary and onion combination.

Garlic Chive Chicken

This was delicious!! This was better than any food I've had in a restaurant in a long time. I had to make a couple of changes though, so I may not be rating this recipe exactly. I prefer turkey to chicken so I used turkey breast. I also forgot to pick up chicken broth so I used white wine instead.

Amazing Italian Lemon Butter Chicken

Amazing, just like the title says! I just made this. The only changes were that I used double the amount of chicken and 1/2 the amount of butter listed. I added all the sauce to the chicken mixture and it was just enough to coat it. I thought the taste was delicious. I did not need to add any additional seasonings (neither salt nor pepper). The capers, bacon, lemon and artichokes give it a variety of flavors. I love it! I definitely plan to make it again, and for company next time.

Apple Pie by Grandma Ople

This is a great pie. I've made it at least 5 times using the recipe AS IS. I've taken it to dinner parties, cook-outs and it is gobbled up. What I love about it is the lack of spices--no cinammon, no nutmeg, cloves. Instead you just taste the APPLES.

Baked Kale Chips

I actually didn't have any kale, so I used some leftover beet greens and radish leaves. It turned out delicious!! I also didn't have seasoned salt but used some sea salt instead. They were as good as or better than potato chips. I will definitely make again.
