Pasta with Scallops, Zucchini, and Tomatoes

My notes: used 3 small/med zucchini. added homemade chicken broth - maybe almost a can worth, added 1/2 onion when sauteed garlic. added 1/4-1/2 butter, fresh basil, and put tomatoes in only a few minutes before done. added a bit more salt, black pepper, a bit of old bay and a little dried basil as well.

Baked Chicken and Zucchini

This recipe is unbelievably delicious!! I only needed 2 large zucchini along with 4 chicken breasts. I also added a sliced yellow and, pepper and diced onion when sautéing the zucchini. I added just a bit of dry white wine to the oil b/c the heat was a little high and garlic began to brown too quickly. I would have never guessed that veggies alone could create such a fantastic sauce. The fresh basil really adds to the flavor. Served over pasta and everyone had seconds and thirds!! New favorite summer recipe!!

Simply Traditional Lasagna

Monterey Chicken

This recipe is AWESOME! What great flavor! Only had thick chicken (which I normally don't like) and yellow peppers and had no mushrooms. Made one batch with added chopped jalapenos and monterrey jack (I like spicy) and one batch without. Both were terrific. So excited for leftovers tomorrow.

Strawberry Cake from Scratch

I very much enjoyed this. I used pre-sifted flour and resifted it in a strainer, and it was still a little "dense", but it was very flavorful and very moist. I followed the recipe exactly. Like someone else recommended, I used a little of the remaining puree I had to put on top of the icing in the middle and it was delicious. I'm not yet a baker, but this recipe has inspired me.

Linguine with Clam Sauce

Deserved 10 stars + for simplicity and deliciousness! I will never have canned clam sauce again. Took some advice of reviewers and used olive oil, parm cheese, red pepper, a little lemon juice and a bit of pasta water and chicken stock since I made too much pasta. This was soooo fast and so easy, I couldn't believe how great it was!

Garlic Pasta

VERY GOOD! I didn't have all the ingredients so I did it the easy way. I used minced garlic and dried basil, oregeno, and parsley, and extra red pepper (love spicy)! I also did add a tablespoon of margerine as suggested by another reviewer! Very good and simple. Will make it again and again!

Cider Cheese Fondue

This was great and the apple juice gave it a delicious flavor! Added some crushed red pepper and garlic powder and dipped hot dogs and bread. Soooo yummy!!!

Slow-Cooker Chicken Tortilla Soup

OH MY GOD! This soup was the best soup EVER! And so simple to make!! I love spicy so used all spices as instructed added some chopped jalapenos and crushed red pepper. Also followed the advice of some reviewers and used extra chicken broth instead of water, added left-over brown rice, and corn tortillas to the soup while cooking. I used raw chicken breast and shredded it about 15 minutes before serving. Baking the tortillas was a nice touch! This is 1000% better than what you pay for in a restaurant!

Shredded Beef for Tacos

I have to review this amazing recipe! I had never so much as touched a rump roast before, so if I could do it, anyone can!! It was so easy and tasted incredible. The only things I added were some whole black peppercorns and chopped jalapenos (since we LOVE spicy.) Oh, and for those who couldn't find the Mexican tomato sauce, they had it at Pathmark in the Mexican food section (near salsa) in a yellow can in Spanish writing. Give this one a try!
