Roast Sticky Chicken-Rotisserie Style

I used this recipe on a chicken which I put in a rotisserie oven. I made a couple of changes. I did NOT add the cayenne pepper, I used white pepper but not the black pepper. I increased the garlic to 1 tsp and I added about 2 tsp of Splenda Brown Sugar mix. The bit of sweetness from the brown sugar made an amazing difference in the rub. With those changes this is one of the best rubs I've ever used on a chicken!!

Cinnamon Belgian Waffles

The waffles were really good except that I felt that Belgian waffles should be slightly crunchy on the outside and chewy soft inside. While almost all other waffle batters I've used have delivered the slightly crunchy outside, this end result from this recipe was an excellent tasting waffle, but not the right consistency.

Fluffy Pancakes

There's a reason that almost 86,000 people have saved this recipe. For the past 20 years I have used the Krusteaz brand pancake mix which has always made delicious light fluffy pancakes. But last week I wanted pancakes and no Krusteaz was in the house. I found this recipe and decided that since so many people liked it, I would also try this. I can't imagine having Krusteaz in the house again when this recipe is so easy to make. By far these are the best pancakes I've ever had, bar none.

Awesome Slow Cooker Pot Roast

I feel like I can hold my own weight when it comes to cooking and I do pretty well (or so others tell me). This recipe is also so easy a five year old could probably do this. So I don't feel I did anything wrong. I honestly didn't care for this roast as I found it lacking enough flavor. It certainly came out tender enough and even fell apart as I tried to get it out of the crock pot. It definitely needed more salt to enhance the flavor. This flavor probably would have also been helped by cutting in a large onion or two along with some carrots and ground peppercorns for additional flavor. This recipe was just kind of blah fixing it according to the published directions.

Banana Peanut Butter Bread

Either my wife or myself printed out this recipe months ago and never payed much attention to it. I used it as a bookmark in another recipe book. I happened to pull out the sheet and left it on the counter. My wife thought I wanted her to make the recipe. Well, she made it and the family is sorry we waited so long to try this. It is an amazing recipe. Perfect blend of banana and peanut butter. We did use "I Can't Believe It's Not Butter" in place of butter and we used Maranatha Organic Peanut Butter which does not have any sugar added. Next time we will experiment using 1/2 cup Splenda for 1/2 the sugar. We may also try to use 1/2 white whole wheat flour as well to see if we can add a bit more fiber and possibly make this a "bit" healthier.
