Great Grandma Johns' Pasties

This is a nice simple recipe. For a busy night shortcut, I used the Pillsbury pie crusts, and serve with Heinz jar gravy. You can whip them up pretty quickly and pop them in the oven.

Awesome Honey Pecan Pork Chops

Used 1/4 c. honey, then added bourbon until I had 1/3 c. of liquid. Had 1.5 lbs. of boneless, butterfly chops. Even after pounding they were too thick to cook quickly. So, I added the liquid and the pecans to the chops, and they simmered in the sauce. Yum. The sauce thickened before they were finished, so I added more honey, this time with OJ to meet the 1/3 c. mark. The chops finished with a delicious honey glaze, and the sauce was perfect over rice. Rave reviews.

Chocolate Lovers' Favorite Cake

Excellent. Didn't have almond extract, so I used orange. Used 1 cup mini morsels, and 1 cup special dark chips. Baked in an tube pan, no problem. Served with fresh whipped cream and whole strawberries. Delicious!

Lemon Cream Pasta with Chicken

I've made this recipe several times as written. However, today it was a little different. My oldest son was home from college and we ended up visiting a little too long. So, I picked up a rotisserie chicken from the take home department of the grocery store and used that instead of baking the chicken. It cuts the time down significantly. I cleaned/cut up the chicken while the pasta was boiling. Whipped it together in a little over half an hour- start to finish. Delicious as written and great as modified! Served with roasted asparagus and some crunchy sourdough. Practically perfect. Plus hubby enjoyed the dark meat addition.

Hazelnut Chicken in Prosciutto-Cream Sauce

I have made this a couple of times and have a hard time cooking the breasts without burning the hazelnuts. Next time I will brown, and the bake. Flavor is great, and the whole family enjoys this meal.

Fruit Sherbet

Excellent as written, easily modified. I used a combo of fat free half and half and skim milk. Use whatever juice combinations you prefer that end up at 2 1/2 cups. Also, reduced the sugar to 1 cup. Mix everything up, store in fridge for an hour or two then used my electric ice cream maker. A splash of vodka kept it from freezing hard. Very light and refreshing. Scoop it into hollowed out oranges, peaches, etc then freeze and it's presentable for company.

Succulent Grilled Hickory Pork Chops

It's not an overwhelming flavor, but it is a good flavor. Absolutely need the hickory chips/charcoal. Chops were juicy and tender.

Apple Walnut Salad with Cranberry Vinaigrette

The dressing was a little thick, easy to fix with a little more vinegar. Used red d'anjou pears, bleu cheese, and sliced the onions. Perfect holiday salad.

Penne with Spicy Vodka Tomato Cream Sauce

This is a good compromise dish for us, in that I love a cream sauce and the rest of the family likes a red sauce. It's not something we have often, but it get's solid good marks when we do have.

My Crab Cakes

Delish. Followed the advice of others and doubled the crab. Eliminated the crackers and added the flour/bking. powder/sherry combo previously recommended. Refrigerated after combining. Fried in cast iron skillet. They are soft when first placed in skillet, but they do hold together.

Swiss Chicken Casserole I

A solid go-to meal after a long day. One pan, no muss, no fuss. I usually add a little white wine to the soup can to clean out the leftover, and add a little something more to the sauce.

Easy Apple Coleslaw

Quite good. The ratio of apples to slaw was a little high, will add more slaw next time. Added toasted walnuts, craisins and raisins. Used the lemon juice to toss the apples (julienne) added cider vinegar to the dressing. Had to add more cider and mayo to make enough (we prefer our slaw moist). Big hit with the kids, hubby frowned until he had a taste.

Italian Breaded Pork Chops

Good, but not great. I usually use Italian breadcrumbs when I cook, so they did not add a special flavor for us. These were just baked, breaded chops.

Country Fried Steak and Milk Gravy

Quite good. Prepared with Crisco in a cast iron skillet, adding spices as noted by other reviewers. Had to add an additional 1/4 c. of Crisco to prevent burning, and to garner enough drippings for gravy. Still came out short on gravy. Will make again, with more gravy.
