Indian Vegetable Bhaji

this was very good but I had to modify it hence the 3stars. halfway through cooking I realized that unless I added some liquid to the pan I would have a burnt mess so I would occasionally add a bit of vegetable stock just to keep everything from sticking to the pan perhaps 1/2 cup in all. the spices seemed to soak up all the oil so there was nothing left for the vegetables to cook in. i also added 1/2 teaspoon of sea salt at the end as it really needed salt to bring out the flavor of the spices. while it tasted great, a dish that you have to constantly stand over, watch, stir and add liquid to, for 30minutes isn't very practical.

Flash-blasted Broccoli and Feta Pasta

this was very good. I left out the spinach because I don't like it, halved the amount of pasta because we like lots of sauce and added a heaped teaspoon of sugar to the sauce as I felt it tasted a little bitter. we had 3 generous servings with half the pasta. will definitely make again.

Carrot, Potato, and Cabbage Soup

very good. I made some modifications to make this a vegetarian main meal. firstly, i fried all the vegetables in the olive oil till tender, then I added 1tablespoon apple cider vinegar and 1 teaspoon sugar with vegetable stock instead of chicken stock. I just mashed all the vegetables together instead of blending and added a small can of baked beans in tomato sauce for protein. I also made dumplings and allowed them to simmer for 20minutes as per recipe. healthy and filling meal.

Vegan Bean Burgers

im really amazed this recipe has so few reviews. it is absolutely wonderful! ive given it 4stars because I substituted AP flour instead but otherwise followed the recipe exactly. im allergic to eggs so this recipe was ideal for me. they held together perfectly.

Veggie Delight on Garlic Bread

this was so good. I don't like eggplant so I substituted mushrooms instead and used olive oil instead of butter on the bread before adding the topping. I also added a bit of grated mild cheddar on top and put it under the broiler instead of the oven.

Ratatouille Bake

this was delicious! I left out the eggplant because I don't like them and substituted diced carrots instead. added a pinch of sugar to the tomatoes to offset the acidity and crumbled in a vegetable stock cube instead of salt. I saw no reason to heat up the kitchen by using the oven(its very hot where I live)so since the ravioli and sauce were already cooked and hot,I just popped the assembled dish under the grill for a few minutes so the cheese would melt. thank you for such a great recipe.

Vegetarian Polenta Pie

for 4servings, I had to double the polenta, salt and water and used a larger pan, perhaps we just have bigger apetites. as it is, its good but with the addition of a pinch of chilli flakes, mushrooms, black olives and zucchini fried with the onions and garlic its MUCH better! I topped it with about 4oz crumbled feta and a sprinkling of parmesan cheese and just popped it under the grill for a few minutes to save on the heat of the oven. I also used fresh sliced tomatoes instead of canned.

Spicy Vegan Potato Curry

after reading the reviews carefully and noticing that a lot of people said that the curry needed depth, I added a tablespoon of mango chutney at the end and let it simmer for 20minutes instead of the few minutes called for in the recipe. it was absolutely outstanding...sweet, hot and tangy! I also added cauliflower and carrots simply because I needed to use them up. a very very good curry with the mango chutney added.

Fried Cabbage I

this is very good.I halved the recipe but used only 1tart apple. added 1teaspoon caraway seeds and 1small onion for more flavor and used 1teaspn apple cider vinegar. I mixed it with some leftover cooked pasta and it was a delicious side dish.

Easter Buttermilk Hot Cross Buns

these were excellent! didnt have buttermilk so added 1tblspn cider vinegar to sweet milk instead, and i sprinkled the sugar with the yeast, allowing it to proof for 10minutes till creamy looking. made a sweet dough for the crosses after they were baked. for those like me who have egg allergies, this is the recipe for you! they rose beautifully and were light and delicious!

Easy Vegetable Pot Pie

this is EXCELLENT. i didnt have condensed soup so i made up a pack of campbells creamy vegetable cup-a-soup instead and sprinkled a tblspn of flour on top of the filling as it looked a little runny. the pie came out perfectly.

Stovetop Chocolate Coconut Macaroons

awesome recipe! i flattened out the mix into a pan to make bar cookies. i melted some semi sweet chocolate and poured on top. once hardened, i cut into bars. also added an extra tablespoon of cocoa since i love chocolate! next time i will double the recipe to make them into a more substantial bar cookie. thankyou for such an easy, delicious dessert.

Potatoes Madras

wow! this was sooo good. i changed it slightly so i cant give five stars but even if you follow it to the letter, you cant go wrong with this recipe. i soaked the lentils in water while i prepared the other vegetables and i used apricot jam instead of the chutney since i like my curries to be hot, sweet and spicy. i took another reviewers hint and fried a bit of cumin and ground coriander with the ginger and curry powder. other than these minor changes, i followed the recipe. thankyou for submitting such an excellent recipe.

Spaghetti Sauce with Cauliflower

i cant give the full 5stars because i changed it a little. i tried to review earlier but the stars wouldnt show up so im reviewing it again. this is an AWESOME dish. so simple, healthy and delicious! i only used 1can tomatoes and a little water. as is written, its too acidic for my taste. i also added 1teaspn sugar to the tomatoes which i add to ALL canned tomato dishes to offset the acid. i crumbled a veg oxo cube to give depth of flavor and to balance the sugar in the tomatoes. it was perfect. thankyou for a great new way to use cauliflower.

Simple and Delicious Buttercream Frosting

i cant give 5 stars since i used margarine instead of the butter and shortening in the recipe which means i modified the recipe slightly. i think this recipe is even BETTER than the ready made buttercream frosting that i usually buy. i used it to frost my christmas fruit cake and everyone was impressed. thank you so much for such an amazing and easy recipe.

Double Crust Bean Pie

this was excellent! i cant give 5stars since i didnt follow the recipe exactly. i added a bit of parmesan since i didnt have enough of the cheese required, plus i added a handful of corn. the most important ingredient is the salsa, if you have a good salsa then the pie will be brilliant. i will be making this again and again.

Tiny Chicken Turnovers

wonderful recipe! i made about 200 of these for my daughters buffet wedding and they were a hit. premade and frozen, it was so simple to just warm them up in the oven and serve. thankyou for a brilliant recipe.
