Indian Vegetable Bhaji
this was very good but I had to modify it hence the 3stars. halfway through cooking I realized that unless I added some liquid to the pan I would have a burnt mess so I would occasionally add a bit of vegetable stock just to keep everything from sticking to the pan perhaps 1/2 cup in all. the spices seemed to soak up all the oil so there was nothing left for the vegetables to cook in. i also added 1/2 teaspoon of sea salt at the end as it really needed salt to bring out the flavor of the spices. while it tasted great, a dish that you have to constantly stand over, watch, stir and add liquid to, for 30minutes isn't very practical.

Flash-blasted Broccoli and Feta Pasta
this was very good. I left out the spinach because I don't like it, halved the amount of pasta because we like lots of sauce and added a heaped teaspoon of sugar to the sauce as I felt it tasted a little bitter. we had 3 generous servings with half the pasta. will definitely make again.

Carrot, Potato, and Cabbage Soup
very good. I made some modifications to make this a vegetarian main meal. firstly, i fried all the vegetables in the olive oil till tender, then I added 1tablespoon apple cider vinegar and 1 teaspoon sugar with vegetable stock instead of chicken stock. I just mashed all the vegetables together instead of blending and added a small can of baked beans in tomato sauce for protein. I also made dumplings and allowed them to simmer for 20minutes as per recipe. healthy and filling meal.
