I tried two others before this recipe and failed miserably... This is hands down the best carrot cake ever! When reading the instructions I was unsure if I should strain the carrots after letting them sit in the brown sugar, there was a lot of liquid in the bowl when it came time to add them to the batter. I strained them and reserved about 1/4 cup of the liquid and added that to the cake batter. I followed all other directions to the letter, baked in 3 9"round cake pans and my cake came out moist and delicious. I took it to church to get some other people's opinion and everyone loved it! Many remarked that it had the perfect ratio of walnuts to raisins, I agree. I am making this for a family celebration next week and can't wait to share it (and eat more of it)!
