Rice Pudding

I used 2 c cooked brown rice, 4 c milk, 3 eggs, 3/4 c sugar, 2 tsp vanilla and about 2 tsp cinnamon and a handful of raisins. I added the raisins about half way through cooking.

Blueberry and Raspberry Pancake Topping

I made this using 2 1/2 c. blueberries, 1 T cornstarch and 1 T lemon juice. I put the blueberries, sugar and cornstarch in a pan, mixed that, then added the water and lemon juice. I then followed the rest of the recipe instructions. The flavor was excellent. However, it was a bit thinner than I liked. I will try adding more cornstarch next time. This is definitely a keeper recipe!

Loaded Mashed Potato Cakes

This recipe is fabulous. I had leftover mashed potatoes that I wanted to use up. I followed the recipe exactly. I used my Pampered Chef scoop to scoop them into the fry pan. That way the pancakes were all the same size (about silver dollar sized). I flattened them out pretty well, and cooked until brown on each side. This was a hit for the whole family. I served the pancakes with applesauce and cottage cheese. This made for a nice dinner on a very hot day.

Caramels

I wish I had listened to the reviews that it turned out grainy. I saw a review saying that theirs did not, so I gave it a try. I stirred mine almost constantly and it was grainy. It also just had a sweet flavor, not really a caramel flavor. This is not what I was hoping for at all. I won't make this recipe again.

Buttermilk Pancakes I

These were great! I had a bit of trouble telling when to turn them...they didn't "bubble" like my old recipe. Also, I used dehydrated buttermilk and they were good. I didn't use a blender. I just mixed by hand til the lumps were gone.
