Beth's Spicy Oatmeal Raisin Cookies

Wonderful recipe! Oatmeal cookies can be tricky to keep chewy. Underbaked at only 9 minutes and they are still soft after cooling. I added 1/4 tsp nutmeg and doubled the vanilla (because that is what my Mother always tells me to do). My husband loves them so they won't last long.

Frozen Blueberry Muffins

Very very good! The secret is DON'T OVERMIX! This batter is very thick. Had to be careful not to break the frozen berries. I only changed the flavorings because I'm not a huge fan of nutmeg, Added 1 tblsp lemon juice for some zing and doubled the vanilla because I always do. I didn't do the topping either. I brushed the warm muffins with melted butter and sprinkled with coarse sugar. Wonderful treat on a cool morning. Thanks.

Big Soft Sugar Cookie Cakes

These are great! I love the texture and the crumb. My dough wasn't too thick, in fact I had to add about 1/2 cup more flour. I used Crisco instead of margarine and added 1 tsp of salt. I also added 1 tsp Almond Extract and 2 tsps Vanilla. The secret to these cookies is to beat the shortning, sugar and eggs until fluffy! Only stir in the flour. These are fantastic! Thank you Heidi.

Soft Sugar Cookies IV

I have been searching for a sugar cookie that is just that, a sugar cookie. THIS IS IT! Soft, chewy, simple. Good balance of sweetness! Chilling the dough made forming balls easier. All I did was roll into 2" balls and press them into decorating sugar to flatten out. Baked up nicely and were all gone in 2 days. Making more today! Thanks!
