Loosemeat Sandwiches II

Reviewed: Feb. 5, 2013
While this was easy to make, it was really bland. Will not make again.

Green Punch

Reviewed: Feb. 5, 2013
Excellent! I made it for a Christmas gathering. Everyone loved it. I agree with some other review - sugar could probably be cut down. Most thought is was fine but a couple people commented on sweetness. Excellent recipe and I will definitely be using again.

Actually Delicious Turkey Burgers

Reviewed: Apr. 11, 2012
These are *really* good. I cut down on the salt by about half (just what I do in almost everything) and I omit the onions (one son hates them and it's easy enough for everyone else to add). I think using them as called for would be even better. But the burgers are very flavorful and very moist - even when cooked on my George Foreman grill. I use only a few of turkey burger recipes all of which I have had to adjust to make perfect...except this one - it's good just as it is. Thank you!

Chocolate Cake II

Reviewed: Apr. 8, 2012
WOW!! This was INCREDIBLE! I made one substitution using flax seed for eggs as I had none. I see some reviews saying it was dry - I cannot imagine that - mine was ridiculously moist! I topped it with a peanut butter frosting. YUM.

Sloppy Joe Sandwiches

Reviewed: Mar. 26, 2012
I have a recipe I have used for years but lately felt it was a bit bland and wanted something closer to Manwich. This is close but WAY TOO SWEET!!!! The sweetness was completely overpowering making it difficult to even finish eating it. I double checked the measurement wondering if read wrong but I did not - I used what it called for. Then I checked reviews again wondering if people were mentioning the sugar thing...to my surprise I found nothing but "touch of sweetness' and 'perfect sweetness" comments. Clearly I completely disagree, but apparently I am in the minority. I made no changes to recipe except to add finely diced onion and green pepper. I gave it three stars because it was easy to make, and if the sugar was scaled back it I think it would be much better. There was a hint of a 'vinegary' type flavor I didn't care for but I will have to make it again with the sugar adjusted and go from there.

Oatmeal and Wheat Flour Blueberry Pancakes

Reviewed: Jan. 11, 2012
WOW! These are so good! Very light and fluffy - I have never had pancakes so light outside a restaurant. I was nervous when I poured them as they were very flat but as they cooked after flipping I could see them fluff right up. The oatmeal is not even noticeable. I did use regular milk and it was fine. I also followed other reviewers suggestions to add vanilla and cinnamon. And I used extra brown sugar (I halved the recipe in general but used the original amount of sugar.) However I do not use syrup so I want the extra sweetness and flavor. I imagine the recipe as posted would be just fine if one uses syrup. (Though even with syrup these changes would probably only enhance the already great recipe!) Thanks - this is definitely a keeper!! :)

Whole Wheat Muffins

Reviewed: Jan. 8, 2012
These were good! I had to substitute flax seed for egg cuz I was out of eggs. I agree with a couple other reviews that they were slightly heavier like a bread than a muffin. However, that is more what I was going for this time so it worked out really well. Adding the cinnamon/nutmeg like several reviewers mentioned wouldn't hurt. I opted to add chocolate chips to half the batch and cranberries/walnuts to the other and I sprinkled them all with coarse sugar. :) Thanks for the quick, easy and good recipe!

Holiday ONLY Mashed Potatoes

Reviewed: Jan. 4, 2012
This recipe is how I typically make my potatoes with one exception -- normally I use milk and, honestly, I didn't notice a difference with the heavy cream. Anyway, my trick for perfect mashed potatoes I learned from a chance viewing of a few minutes of Cooking with Emeril (or whatever it was called...) several years ago. He instructed to return the drained potatoes to the pot for a few minutes before adding the ingredients and mashing them. The heat removes the excess moisture. I didn't watch to see how he recommended mashing them but I have always used an electric mixer (now a stand mixer) and ever since I began following his method I have not had that gummy, gluey, watery, whatever-you-wanna-call-it it's yucky consistency. Give it a try!

Really good...I was surprised at how fluffy they really were. Flavor is good, too. I don't really have anything to add to the other reviews but wanted to give the rating. Thanks for a great recipe!

The Best Bean and Ham Soup

Reviewed: Jan. 4, 2012
I am rarely steered wrong by reviews here and, as such, I rarely write bad reviews. This is, however, one of those rare times. I am completely disappointed in this recipe. To summarize: if you are looking for a traditional 'comfort food' type of Bean Soup, keep looking -- this is not it. This should be called "vegetable soup with beans and ham." I guess I thought the chicken stock, at 7 cups, would be the star broth flavor as it should be and the other liquid ingredients would simply add to the medley -- NOT the case. By the time I added the vegetable stock, tomatoes and v8 juice, of which I used less than called for and substituted the rest with chicken stock, I only needed a couple of cups of chicken stock. This is very much a vegetable soup. The ham flavor is non-existent and the beans, even though there are certainly more of them than any other vegetable, seem nothing more than a mere afterthought. Now, that all said...as a VEGETABLE SOUP it is ok and probably "good" if you like veg soup (I do not...I tolerate it.) It is flavorful with a hint of spiciness. Because of that, and that it was fairly easy to prepare, I gave it two stars instead of just one. Thank you for taking the time to post the recipe, and the flavor is ok for what it is (ie vegetable soup)...just was not what I was looking for. ETA: the next day the soup was more like a stew. I did place the rest in individual sized servings in the freezer for hubby - so thankfully, it won't go to waste.

Mom's Turkey Sausage Patties

Reviewed: Jun. 29, 2011
I had a little leftover turkey from making "festive turkey meatballs" so I scaled this recipe and made a little bit of crumbled sausage to put in eggs or something. It is really good. Flavor is excellent. The sage is the primary flavor, as it should be, but i did notice a bit of 'kick' from the cayenne pepper so that could be adjusted to taste if you don't care for that flavor/heat.

Festive Turkey Meatballs

Reviewed: Jun. 29, 2011
Overall this was very good. The meatballs are excellent. I made one alteration: substituting panko for half the bread crumbs and seasoned bread crumbs for the other half. The sauce...well- I made these as a meal, and not for a party dish. The sauce was way too sweet for that. And it made too much. I will halve the sauce recipe next time and I will play with the honey amount...I am thinking equal amounts of honey and mustard might be a good starting point next time. Thank you- with a little tweaking of the sauce to taste this will be a familiar sight on our menu. :)

Curried Honey Mustard Chicken

Reviewed: Jun. 27, 2011
This was absolutely to die for!! I am not a fan of curry- So I started with a LOT less than it called for. Added more in half teaspoon increments tasting after each addition. I ended up going to the suggested amount in the recipe and, frankly, I could have handled even more. One note...the left overs are even BETTER. I may even consider making this dish the night before I actually want to serve it, they were that good.

Sweet-Sour Franks

Reviewed: Jun. 27, 2011
I admit I was nervous about making this. It sounded good but...weird. I finally bit the bullet and it is a new regular item on my menu!!!! I use Hebrew National hot dogs for everything, this included. I change nothing on this recipe except I never measure onions...I put in whatever looks good. I think the recipe calls for a whole onion and that would be WAY too much imo. Very good- THANK YOU!

Jalapeno Popper Spread

Reviewed: Jun. 27, 2011
Excellent! Due to a gross miscalculation on my part I added WAY more jalapeno peppers than I should have...but it was still good! After reading the reviews I did opt for using panko on top tho in the end I don't think I needed it because we used tostidos with them and that sort of took the place of the breading...and if I do use them next time I will probably mix with a bit of seasoned bread crumbs as well.

Veggie Egg Scramble

Reviewed: Jun. 23, 2011
Very good- not really sure i have much to add to the recipe, other reviews, etc. I made it as is ('cept I just used whole eggs, I was lazy- whites would have been even better). Quick, easy and fairly healthy meal ('specially if you are not lazy like me and use the whites only). thank you!!

Blueberry Streusel Muffins

Reviewed: Jun. 10, 2011
INCREDIBLE!!!! I used frozen blueberries and their juice sort of "smeared" into the batter as I folded them in- infusing the flavor throughout. I made the recipe as is and these are possibly the BEST muffins I have ever had...homemade or bakery fresh. YUM!! Thank you!!

Turkey Meatballs in Garlic Sauce

Reviewed: Jun. 10, 2011
It is RARE ratings/reviews steer me wrong. But, imo, this recipe was not good at all. :( The sauce was extremely tasteless and the garlic in the title...? hmmm...couldn't taste it in the recipe. (Though admittedly I like A LOT of garlic.) I gave it three stars because it was edible, i admit it was easy to make and also, as leftovers, it was actually a little bit better than the evening I prepared it. (Still didn't care for the sauce.)

Buffalo Chicken Fingers

Reviewed: May 18, 2011
These are a new family favorite. This recipe as written has a spicy flavor without being overpowering. Want more kick...just add more spices, some hot sauce, serve with a sauce, etc. So easy to customize. Make sure to spry/oil your pan well so you don't lose half the breading when turning. Recipe is quick and easy- my 10 yr old son actually made them the other night (except cutting up the chicken.) Thanks for a great recipe!! *edit: I made these yet again tonight. We love them. Anyway, I made the breading a little differently: 1/2 c Panko and 1/4 c seasoned bread crumbs. I thought the recipe as written was excellent- this minor change was amazing!!!

Chewy Brownies

Reviewed: Feb. 13, 2011
These are REALLY good. And they are best if you can manage to let them sit for hours before eating. (So, they're better the day after baking them.) Totally not healthy and full of sugar but SO good. =)
