I have just started cooking for my family this past year. I have always been a working mother and my status changed to stay-at-home mom in January 2008. My husband has always done the cooking in our house but not anymore and I love it!

Soft Oatmeal Cookies
I made them just as the recipe indicated. I split the dough and added raisins to part and chocolate chip chunks and walnuts to the rest. They are both amazingly good. I rolled into balls and did not flatten, I like thick gooey cookies and that is exactly what I got. VERY GOOD, they will not last more than a day or two in my house.

Filled Date Cookies
My mom made these every year. I like this version better than hers. She would stuff the date with a walnut and dip in the dough and bake. I like the filling idea better. These are a wonderful variation of comfort cookies from my childhood. They will have a place in my Christmas cookie baskets this year. Thank you for sharing!

Central American Tacos
I followed the advice of others and used 2 potatoes and added cumin to the meat. They were good, a nice change of pace. The sauce really does make this recipe. I give our dinner last night 4 stars but I give the leftover breakfast tacos I made this morning 5 stars. Simply add some scrambled egg, picante and cheese to the leftover meat/potatoe mixture and you have the BEST breakfast tacos ever! I am going to use the leftover tomatillo sauce on some blackened chicken.
