Mexican Lasagna

3.5 stars because I didn't actually follow the recipe. It's a great idea, quick, delicious and easy to cook and alter to ones taste. I browned the beef, cooked chopped white onion some scallions, garlic, green and red peppers, jalepenos, mixed in a can of diced tomatoes, added the beef added some cumin, black pepper and cilantro. I sprayed the bottom of a pyrex with some canola, layered whole wheat flour tortillas, followed by beef and sprinkled some cheese. topped that with tortillas, beef, and cheese. baked for about 10 minutes and let rest. Served with sour cream. Next time will probably add a layer of refried beans to the bottom before the first layer of beef to try it out- this recipe leaves you open to experimentation.

Fresh Asparagus Risotto

Took someone's advice and used 3 cups of broth (2 cans) and 2 cups of water instead of what was called for. Substituted evaporated milk for the heavy cream, omitted the wine and used regular black pepper. it was really delicious!

tasty!!! really like the citrus taste. its also one of the few recipes for pork shoulder that doesn't require 5hrs in the crockpot/oven. i didn't use any Goya products and was still able to create the recipe. Not spicy at all even though i added the jalepeno. Ate with warmed tortillas and homemade pico de gallo.

Chicken Breasts with Balsamic Vinegar and Garlic

i pounded the chicken breasts before cooking because they tend to be more tender that way. i used a small can of sliced mushrooms instead of fresh mushrooms and though not stated i did a rough chop of the garlic. Served with white rice and french style green beans. Very classic dish. Tender and tasty- the best part is that it's quick

Braised Pork Ragu

Chicken Cordon Bleu I

4.5*** Excellent. i rinsed the cutlets in lemon juice then i dipped in egg and breaded the entire cutlet before adding ham and cheese. i used boars head ham and mozzarella because i didn't have swiss. drizzled olive oil over the top instead of butter. Cooked covered at 350 for 40 min. Uncovered sprinkled some more cheese and broiled for 2 min. Served with garlic-spinach and white rice. Very tasty. the chicken was very juicy.

Soft Sugar Cookies IV

excellent non rolled out cookies. i made one batch of cookies and refrigerated the rest of the dough in a freezer bag. Was able to bake the rest of the cookies up to a week later tasting just as good as the first time!

Jamaican Jerk Dry Rub

excellent!!! i know real Jamaican Jerk is supposed to be spicier, but the amount of heat in this recipe was perfect for my bf and i! Great rub for fish or chicken! Scaled down the recipe to an amount for a small spice jar (about half-cup)

Carnitas Filling

Gave it 4 stars because the recipe needs to be modified, yet it's the fastest way to cook pork shoulder i've seen! After the 2 hrs the pork is easy to shred add to skillet. To skillet add about 1 cup of pork broth, some adobo seasoning and dash of hot sauce if you like. Cook high until broth evaporates, let pork sear a bit, add another 1/2 cup of broth to scrape up brown seared goodness from skillet, it evaporates quickly and pork is ready to serve! Done in 2.5hrs as opposed to slow cooker recipes, that require 4 hours minimum!

Really, really tasty. Only problem (and why only 4 and not 5 stars) is it's inconsistent. Don't know why, but it comes out different every time i make it. Think it may have something to do with the temperature of the butter.
