Smashed Cauliflower

I needed to drain some liquid because otherwise it would've been too watery and mushy. Once I drained it and finished preparing it, it was delish! My guests couldn't get enough of it :)

Easy Hummus

The recipe followed as directed was not good however it did provide a good base to build off of. I have made this several times now and I think I've perfected it by adding olive oil, more cumin, chili powder, and a dash of red pepper.

Italian Spaghetti Sauce with Meatballs

This rating is ONLY for the sauce, not the meatballs. I did not use the meatballs recipe as I have a healthy go-to meatball recipe already. This sauce is better than any store bought tomato sauce I've ever bought. This sauce has ruined me and my family in the sense that we will not buy pre-made store sauce ever again (until necessity calls for it). It is delicious, savory, chunky, rich and just plain awesome. Thanks for the recipe!! Its my go-to tomato sauce now!

Fennel Soup

I've never had fennel before so this was a wonderful surprise treat for me. It oozed sophistication with just the right amount of beauty when plated. After reading reviews, I decided to add 2 medium potatoes to the soup which in my eyes puts this recipe at 5 stars. The potatoes added a slight richness and creamy texture once pureed. Without the potatoes, I feel the recipe is still good and worthy of 4+ stars. Used the 1/4 cup smart balance spread to cut calories and it was still buttery and delicious. Fresh cracked sea salt and pepper with a dollop of sour cream on the soup before serving... So tasty!! Next time I will also garnish with scallions or fresh chopped parsley on top of sour cream. I'm a fan of fennel now :) Thanks!

Light Cinnamon Coffee Cake

This is a must have recipe in my household. Per the original recipe, it is delicious. If you change it by adding vanilla, extra cinnamon, or fruit to the batter, it will still be amazing. This is my new go-to breakfast recipe.

Garlic Cheese Biscuits

I love these biscuits... so delicious! I brushed minced garlic instead of the garlic powder with the melted butter on the biscuits about a minute or 2 before I took them out of the oven and afterward also. Plus I added a little minced garlic to the dough before I baked them for extra goodness. Results= the butteriest and garlic infused biscuits I've ever had. Plus it took me no time to prepare them. This recipe is a great addition to anyone's mental cookbook!!

Shrimp Scampi and Tomato Broil

This was a quick, easy and delicious meal! The garlic infused shrimp...awesome. I added red pepper flakes just to try it. Yes it was a great addition, however it was not necessary because the meal was perfect as is. I thank my husband for the suggestion to make shrimp scampi. I tossed in some linguine to complete the meal. Gonna make this again very soon!

Jamie's Black Beans and Rice

I took the suggestion of serving this with tortillas and it was extra delicious. I also took the liberty of adding garlic to the fresh peppers/onion saute. To finish, I used homemade enchilada sauce (courtesy of my mother-in-law), added some leftover shredded grilled chicken, and topped it off with sour cream and shredded cheese. Overall, a great meal and I look forward to the leftovers for tomorrow's lunch!

Mouth-Watering Stuffed Mushrooms

This was a great delicious and simple recipe!! I resisted the urge to modify the recipe per several reviewers and followed it exactly. It was awesome!!! Can't wait to try it again with a few extra tasty additions (i.e. bacon)!!

Sloppy Joes II

A must have recipe in my household!!! The recipe is perfect as is but I changed it up the 2nd time I made it (just because I am me!) I added a 1/4 cup BBQ sauce and took away 1 tablespoon brown sugar and 1/4 cup less ketchup. Absolutely delicious the 2nd time too!!

Stovetop Pinto Beans

Great dish!! Used larger 30 oz. can of beans and 1 can of regular diced tomatoes and 1 can of diced tomatoes with green chiles, ground turkey, and nixed the ground mustard (didn't have any). Absolutely delicious and definitely going to make this dish again. Makes great leftovers too!

Turkey-Stuffed Peppers

Very easy and tasty recipe! I used 6 medium green and red peppers so I had to double the recipe. Per another review, I opted not to boil the peppers. This allowed them to have more substance after baking in the oven. Also I used 4 garlic cloves (I love garlic!) and added 2 cups cooked white rice. I think the rice made the recipe even better. Definitely going to make this again!!

Peanut Butter Oatmeal Cookies

I have yet to go wrong with this recipe- I think it's impossible if you follow the exact recipe. I've even used raisins and chocolate chips separate times and it definitely added more flavor to an already delicious cookie. My co-workers were amazed that the cookies were so healthy, moist, and flavorful. Possibly the best (and healthiest) oatmeal peanut butter recipe I've come across!

Parmesan Asparagus

Definitely a good recipe. I also used a bundle of aparagus and drizzled enough olive oil over the aparagus in a baking dish and mixed it together with salt and pepper. A great addition is to bake it with fresh minced garlic on top. So good!! This paired wonderfully with chicken marsala and a baked potato that I made for dinner. Nice twist on baked aparagus!!
