Downeast Maine Pumpkin Bread

I baked this up as mini-muffins and used them as a basis for a muffin cake for my daughter's birthday. I shaped them like Scooby Doo and added cream cheese frosting -- they were a big hit, less sugary and more spicy than typical birthday cake, but so delicious.

Fresh Pumpkin Pie

Made too much filling for a single pie (even though I only had 3 eggs), but it was sooo good. I reduced the honey a bit and added more ginger. Firmed up in only 45 minutes using 3 eggs. This was my first time making fresh pumpkin pie and it was great!

Addictive Sweet Potato Burritos

These were very flavorful and very filling. My husband even liked them even though he doesn't like sweet potatoes because there were so many other flavors. I used the black bean version that other readers recommended. I found the sweet potato burrito filling a little bland and added garlic salt to a second batch.

Lentil Soup

Jay's Signature Pizza Crust

This dough was edible, but not great. My 3-year-old turned up her nose at this pizza. I think it needed lots more oil to taste anything like take-out pizza crust.
