Quinoa Tabbouleh

Absolutely astronomical! I use a can of hunts diced (undrained) instead of fresh, and I boil the onions with the quinoa, but otherwise, everything else the same. Best tasting tabouleh I've had, ever!

Hot and Sour Tofu Soup (Suan La Dofu Tang)

Absoutely amazing! I didn't use the thai chili sauce, as I didn't have any on hand. Without it this is still absolutely fantastic. A shame there is so much sodium, perhaps using low sodium broth and soy sauce would remedy that.

Curried Lentils

I doubled the recipe since the can was roughly 1.5c of coconut milk. It came out awesome with half the curry paste called for - but I felt it needed more. But then, George likes his food spicy. Also, I added 1T of brown sugar which added to the flavor since I used coconut milk instead of cream of coconut. Fantastic over sushi rice!

Lentil Soup III

Perfect diet food? At first I found this to be quite bland, but as with most soups, this tasted quite awesome after sitting for a day in the fridge. I added some carrots and used the whole can (6oz) of tomato paste and a little salt and pepper.
