Chicken With Mushrooms

I made this recipe but instead of using an egg, I marinated the chicken in some Ranch dressing and the panko bread crumbs stuck to that. I also sautéed 2 cloves of garlic with the mushrooms before assembling this dish. All in all a great and easy dish to prepare and it was good enough for company too.

Potato Soup IX

We had this for dinner tonight and my husband and son just loved it. I thought that it could use more flavour and put some crumpled bacon and shredded cheddar cheese on the table to accompany it. The flavour was somewhat similar to a loaded baked potato. I think that this is a great recipe for winter when you feel like comfort food.

Quinoa with Chickpeas and Tomatoes

Greek Green Beans

Fabulous recipe! I thought that the beans may become limp cooking for so long but after 45 minutes they were perfect. I added about 1/3 cup of feta on top of the beans and put the lid back on the skillet to melt it. This was the added touch that it needed to become over the top perfect. Thanks for posting such a lovely recipe.

Double Crust Stuffed Pizza

We're Canadian and when we go to Florida in the winter we always have a Giordano's pizza. While this recipe isn't a clone, it is very good. The only thing I would alter is to cook the sausage prior to baking as mine wasn't quite cooked through and we had to microwave each piece to ensure we wouldn't have food poisoning. All in all a great recipe that we will enjoy for many years to come while in Canada. Thanks Pnutmommy for posting.

Cranberry and Cilantro Quinoa Salad

This was a good recipe, however we felt that there was too much curry powder. The only variation I made was to use raisins instead of cranberries because I didn't have any on hand. I'll make this again but will use less curry powder.

Rhubarb Dream Bars

Thank you for posting a new family favourite! The only change I made was to decrease the sugar to 2C and I had a scant 4C of fresh rhubarb to add in. In my oven they came out perfectly in 35 minutes and I did not have the filling stick to the pan as other have. These are heavenly bars and I'm sure everyone will enjoy them as we did.

Baked Falafel

I did not fry the falafels but sprayed them with olive oil and then baked them at 400*F for 30 minutes. We enjoyed them much better than the ones that we have tried that are fried. We must not be big eaters as we have another dinner for tomorrow. Thanks for posting this great recipe, Bette.

Avocado and Tomato Salad

Whipped Shortbread Cookies

These cookies are light and they melt away in your mouth. I used one reviewer's instructions to whip the batter after each addition and we were awarded with some tasty morsels. I needed to have my oven set at 350*F to give the edges some colour. Thanks for posting William, this is the perfect size recipe for not wanting to indulge too much.

Unbelievable Chicken

This is a nice marinade, but I wouldn't say that it was unbelievable. We thought that it was a little too sweet would cut back on the sugar. Overall it was an easy marinade.

Oatmeal-Currant Scones

We enjoyed these scones however they were not the best ones we have tried. I think that I would increase the sugar or use honey when I bake them again because they were not sweet at all. The dough was quite sticky and I was happy that I made them the night before I was to bake them so that they were able to set up again. They took 7 minutes longer in my oven but that may have been because I took them out of the fridge just before putting them in the oven. All in all it was a good basic recipe to build on.

Strawberry Pie

I would rate this at 3.5 stars. I liked the freshness of the berries, but thought that the jello taste was too prominent. I will try this with peaches later this summer and update my review at that time.
