Zucchini with Chickpea and Mushroom Stuffing

We really liked this recipe but found it to be a lot of work. The second time we made this we just chopped the zucchini into 3/8 inch slices and, after sauteeing the mushrooms/onions, we added everything else into the saucepan, covered on low until zucchini were done, and served it with rice. We can't wait to make it again, it was so fast and the perfect combination of flavors (and cheap too!). As a note, we've never had parsley on hand, so both times we've used intead a small handful of "mixed herbs" (basil, oregano, sage, etc...).

Vietnamese Sandwich

This was excellent, and super easy. I used siracha chili sauce and crushed garlic, and rubbed this on the pork before broiling. The second time I made this I made a salad-version for a picnic (the first was too messy for picnics), which turned out quite good and even faster. In addition to the pork, cucumber and red onion, I used romaine lettuce and dressed with a mixture of mayonaise, chili sauce, garlic and lime juice, and served with slices of french bread. Yum.

I Love this recipe. I always add frozen corn for the last 15 minutes, which I think works really well in this recipe.

Amazing. I've made this so many times, and it's always a hit. I never have bothered with mirin, just used sherri as I've got it on hand.

Purple Plum Pie

This was fabulous, the perfect combination of sweet and tart. It was ridiculously easy to throw together, and doesn't require too much fat in the topping, which came out nice and crispy. It was a perfect solution for a bunch of plums I had bought at the market that didn't taste good at all!

Kelsey's Favorite Stuffed Green Peppers

Tasting the stuffing before it was baked, I knew this was going to be horribly bland. Also, I felt there was too much rice. I added cumin, chili powder, worcestershire sauce and soy sauce, and rather than shredding the cheese and using it as a topping, I cubed it and mixed it in with the stuffing just before stuffing. They turned out great this way!!!
