Almond Chocolate Coconut Cookies II

These are very good. And the best thing is how soft they stay. I live in a dry climate, and baked goods dry out really quick. But these stayed soft for at least a week. Don't let the coconut put you off. My dh doesn't like it, but he still liked the cookies. This is much more like a fancy choc. chip cookie than like an Almond Joy candy bar.

Uncooked Banana Pudding

This is a very fast, but rich-tasting dessert. The mixture of ingredients for the pudding makes it a cut above the usual banana pudding.

Creole Shrimp and Pasta Meuniere

We all liked this pretty well. Son thought the noodles were too bland. It is certainly easy to make...less than 35 minutes, unless you count peeling the shrimp.

Hawaiian Waffles with Pineapple and Coconut

These were not worth the trouble. The sour cream made them too sour. They were nice and crisp, but I had to use more topping to cover up the sour flavor.

Salmon with Dill

Everyone in the family like this one. My fillets were a little thick, which concentrated the spices on the fish, and caused me to need longer cook-time. Otherwise, things turned out well.

California Salad Bowl

The whole family liked this one. I cut back on the mayo, as suggested by others, but then added some back to get the dressing to the right consistency. Add the chips right before serving. We had leftovers & they got soggy.

Citrus-Salsa Baked Beans

Ok, but odd. The flavors don't necessarily compliment each other. Maybe if you are a HUGE baked beans fan. My husband suggested next time just use a can of pinto beans. I think I will try that.

Cheese Cake Cups

These were still RAW after 15 min. By the time they were browned on the top, I may have overcooked them a bit. I filled the well in the center with chocolate chips, which worked out well. A good snacky kind of dessert, but kind of small. Count on more than one per person unless these are for school lunches or a buffet.

Basil Shrimp

Very, very tasty. All that basil was a bit of a pain, but worth it. I used my grill basket instead of taking the time for skewers. Added about 2 minutes per side. And I only used 2 pounds of shrimp, which was plenty. If you're serving this as one of many dishes at a cook-out, it's fine as-is, but the flavor is very strong for a main dish. I combined it with the Lemon Pasta Sauce from this site, and it worked well. My husband said the shrimp was too strong and the pasta was too bland, so it evened out.

Santa Fe Rice Salad

I liked this one, but the family didn't. You have to really like marinated salads, I think. If I was going to make it again, I think the dressing can be cut by 1/2 without any harm to the dish.

Lemon Pasta Sauce

This is delicious, but a little bland. Great with strong meat flavors. I served it with the Basil Shrimp from this site, and it was perfect, because the shrimp had a very strong flavor.

German Lentil Soup

I'm not fond of lentils myself, but the family liked it very well. Good way to use leftover easter ham. I nearly doubled the liquid. It would have been awfully thick otherwise.

Easy Chicken Enchiladas

This is very tasty, but kind of rich. When I make it again, I will substitute LF cheeses and also half the cheese topping. I was in a real hurry, so I layered the tortillas instead of rolling them. It seems like a lot of filling for 6 6-in tortillas. If I were going to roll them, I would use more or bigger tortillas. Also, unless you're serving a group of teen-aged boys, I would say this serves 8-10, especially if you have side-dishes.

Bean and Sausage Soup

I followed the instructions, but most of the beans in my bean mix were still pretty hard at serving time. I haven't seen that comment before, so maybe I had old beans, or maybe my crockpot doesn't cook hot enough, or maybe it's high altitude (I live at 6500'), but this is definitely NOT a keeper for us.

Apple Pie III

A hit with my family! Like others, I found the crust dough hard to handle, but I just patched it back together after I put it in the pan, and it turned out well. The crust is nice and flaky...more so than most of my home-made crusts.
