About this Cook
i look forward to holidays and breaks so i can spend them baking... and spend time with my family (3 kids; 1 husband) :D. i enjoy trying new, and sometimes challenging, dessert recipes. i can bake up to 4 different desserts a day, and hope that my husband takes care of the meals. and if you haven't figured it out yet, i kind of like to joke around.

My favorite family cooking traditions
i grew up where my mom baked daily. she passed away when i was eight, and way before i was of age to know that "when i grow up, i want to be just like her." so i strive to be like her, baking for everyone.
My cooking triumphs
i made pastit (papaya turnover)!, just yesterday as a matter of fact. this was something my mom made very often, and i've been wanting to make it. pastit is a crust filled with candied papayas. i knew it was labor intensive, but when i was done... alleluia!; i felt ~accomplished. making pastit was something i set out to do during christmas break, and i still have a week left!
My cooking tragedies
when i was still attending college, and my husband still working, his co-workers often asked me to bake them some goodies. one day, one of his co-workers requested for three desserts. i only had two hours to prepare them! the first one was good, the second as well. the third... i had plans for a four layer peanut butter cake. the cake was too crumbly, and broke multiple times (it was definitely fixable). but i was frustrated and punched the cake. dumped it in the garbage and felt so irritated. it was the worst ever. come to think of it, i think i'm going to attempt to make that cake now... because as i remember, the icing was incredibly delicious.

Holly Christmas Cookies
this taste delicious. not too sweet, but why isn't it crunchy? did i add the cereal in too quickly? am i supposed to wait until the marshmallow mixture cools a bit? (my niece made this and it stayed crisp for hours)

Banana Flips
after 17 minutes in the oven, the cakes were still very battery. i had to go to the store so i told my husband to check it in 15 minutes. it was a little over baked but it gave a nice crisp on the sides. i was a little hesitant to make the filling... especially because it called for flour and there's no cooking it, but it turned out really great. i didn't add all the milk, i just kinda stopped on the consistency i preferred. it was really thick and separated the layers of the cake nicely. for something optional, i heated chocolate fudge and caramel as drizzles for my guests. they enjoyed it... even the ones that were very conscious about their weight and sugar intake. they all had a second serving.

Pina Colada Cake III
i think the taste evaporated with the smell. while this was baking, the house smelled wonderful - coconut, rum, pineapple... delicious. when it was done and chilled though, it was just too bland. you could sometimes taste the rum, and the pineapple, but the coconut is no where to be tasted. (i could sprinkle it with shredded coconut, but we don't like packaged coconut. :()
