Stuffed Chicken Valentino

Delicious and definitely "company worthy" - everybody loved it. I served it with my homemade marinara sauce, instead of Alfredo, to cut down on calories and fat.

Cinnamon-Peach Cottage Cheese Pancakes

I made these yesterday, following the recipe as written, only increasing the cinnamon by 1/2 teaspoon cinnamon because we love it in our house. These pancakes are a real treat! They are going into my regular rotation with a special note that they are definitely company-worthy. Thanks for sharing!

Chocolate Banana Cream Cake

I've always found the combination of bananas and chocolate absolutely delicious, and this recipe did not disappoint. I made only slight changes, using sugar free, fat free banana flavored pudding mix, which eliminated having to use banana extract, and I used skim milk to lighten the calorie load.

Cherry Tomato Corn Salad

I like that there are fresh vegetables in this salad, but the dressing needs something more. I followed the recipe to the letter and marinated overnight, yet corn and tomato were the only flavors that really came through.

Hawaiian Chicken Kabobs

The marinade made these delicious. Because we love veggies in our house, I added mushrooms, onions and green pepper. As noted by others, it is important to marinate meat and vegetables separately. It cuts down on the growth of bacteria, and the marinade from the vegetables can be safely used to baste your kabobs as they cook, while the marinade from the meat cannot and should be discarded.

Zucchini Spread

This was very tasty and easy to prepare. My husband has been coming home with produce brought from coworkers' gardens for a few weeks now, so its great to find new ways to use the abundance. I did add a couple of tablespoons of mustard, but that is just a Southern thing. I add mustard to all my sandwich spreads, potato salad and macaroni salad, too.

Sausage Cheese Puffs

Down South we call this Sausage Balls. I don't add water, but I do add 1-2 tbsp. buttermilk which keeps them from drying out when reheating. My husband takes a huge bowl of these into work each year around the holidays and says they are gone before coffee break time.

Ham and Cheese Salad

I've been making homemade ham salad for over 25 years and I never considered adding cheese, even though I seem to find a way to work cheese into as many recipes as possible. I use Miracle Whip instead of mayonnaise, and also add a couple of tablespoons chopped onion in my ham salad. The addition of cheese made an easy and tasty recipe even better. If anyone finds the recipe too dry, I suggest adding a little more mayo and mustard until the salad reaches your desired consistency. It really is as simple as that.

Ultimate Party Meatballs

I've been making these meatballs for several years. Sometimes I've made my own meatballs, and other times, when hosting a large event, I've used the more convenient frozen meatballs. Either way, there have never been any leftovers.

Amish Macaroni Salad

Sans the sugar, this is the macaroni salad that our family has enjoyed for many years. I am glad to see that this recipe, like my own, calls for Miracle Whip, which I also use in potato salad, chicken salad and egg salad. Most often, salads call for mayonnaise, which I find rather bland.

Porcupines

Porcupines was one of the first recipes I learned as a new bride, over 35 years ago. I believe the original recipe was like this one, but I have modified it to give it more flavor and "zing." The first modification I made was to use instant rice. It seems to "glue" the porcupines together better, so no eggs or bread is needed. I also add diced green pepper to the meatball mixture. After placing the porcupines in the baking dish, I top with 2 can of Rotel with juice, eliminating the need for water. Just before removing from the oven, I sprinkle on cheese (sharp cheddar is our favorite, but use whatever suits your tastebuds) and return to the oven just until cheese melts. I make these for company all the time and everyone always asks for the recipe.

Beer Margaritas

I made these last night, adding Sprite in place of the water as recommended by another reviewer. I don't drink beer and my husband has never liked tequila but we loved this concoction, so much so that we made another batch tonight. This recipe is perfect to beat the heat and humidity that accompanies our favorite activity ~ Tennessee porch sittin'. I can't wait to introduce "beeritas" to my sisters at our annual sisters slumber party!

BUSH'S® Country Cornbread Hoppin' John

I've made something similar to this before, using my own buttermilk cornbread recipe. It is delicious. And for the "critic" who says this recipe isn't authentic Hoppin' John, I say: nobody claimed that it is. Even the name cleary states "cornbread hoppin' john." It is a variation of a traditional recipe, and no more misnomered than vegetable burgers.

Schnitzel

Really, I'd like to see reviews from folks who have tried recipes, instead of nitpicking about what one has chosen to name a recipe. To be absolutely literal, schnitzel means "cutlet." Traditional schnitzel is made of veal and is known as weiner schnitzel. But, this recipe is accurately named, as it a recipe using cutlets. I have also used a similar recipe to make what I call chicken schnitzel. That said, this recipe is very good. I did add a spice blend of salt, pepper, garlic powder and onion powder to the breading. The whole family loved it.

Corn Dog Muffins

As a Southerner, I'm not a fan of sweet cornbread mixes but the idea of corn dog muffins really appealed to me because my family loves them. I made these muffins with my simple but delicious buttermilk cornbread recipe (cornmeal mix, oil and buttermilk)and omitted the sugar. They were delicious.
