Chef John's Ham and Potato Soup

Reviewed: Mar. 5, 2012
I've made this recipe a few times now, and whereas I may add some extra seasonings and/or veggies, the basic recipe is fabulous! I usually have to make double if I want any for lunch the next day! Oh, and use the amount of flour called for if you're looking for something thicker than broth-based soup soup, it's a perfect ratio!

Easy Sugar Cookies

Reviewed: Dec. 5, 2011
These cookies turned out fabulous! The edges were crispy, but the center was nice and chewy, and lacked the typical flour taste of "sugar" cookies. One note though, you have to leave the butter out until it is COMPLETELY room temp, otherwise they turn out kinda grainy. Oh, and double the recipe, otherwise you may not get any.

Jay's Signature Pizza Crust

Reviewed: Jul. 21, 2010
This is an excellent crust recipe as is! It comes out chewy with a fairly crisp crust, but I always pre-bake the crust before topping it (otherwise it may turn out soggy). That said, I am constantly changing it up to make things new. My favorite combination is using 1/2 wheat flour and 1 Tbsp fresh ground black pepper. I also cook it on the grill during the summer, and it works there too!

Slow Cooker Sausage with Sauce

Reviewed: Jul. 20, 2010
Well, I've got to say, I didn't expect this recipe to blow me out of the water, and was pleasantly surprised when it did! The sausages were very tender. I did double up on the onion and boil the sausages for 10 minutes before throwing them in the crockpot (to cut down on the grease), but besides those minor changes, this is excellent as is! Who would figure so simple could be so good?

Strawberry Dream Cake I

Reviewed: Mar. 9, 2010
This was possibly the WORST cake I have ever tried. It did not have much of a strawberry flavor, disgustingly sweet, and the texture was that of cookie dough (and, yes, it was fully cooked through). I will never make this recipe again.

Flatlander Chili

Reviewed: Jan. 4, 2010
It's not very spicy, so people who don't like spicy things will enjoy this just as much as people who like spice (and those people can put extra chili powder in their own bowls!). I used diced beef instead of ground, and it came out perfect. This is definitely the best potluck chili I have ever made (and I've made a LOT)!

Coconut Pancake Syrup

Reviewed: Nov. 17, 2009
This is a good, fresh tasting syrup, but delicate. I only used 1 Tbsp cornstarch, and that thickened it fine.

Brown Sugar Meatloaf

Even with the reviewers changes, I still found this meatloaf to be too sweet, and the texture was odd. No-one in my family liked this recipe.

Venison Bacon Burgers

Reviewed: Jul. 4, 2009
This recipie makes the best burgers! My boyfriend (at my prompting)has made this 3 times, with the burgers being gone before the plate even hits the table. A must-try for burger lovers! Edit: So, A year later he and I are still making these burgers for every picnic we do, and they are still coming out delicious every time! The only thing I've changed is cooking the garlic and onion in a little of the bacon grease instead of adding olive oil to the mix.

Slow Cooker Beef Stroganoff I

Reviewed: Apr. 22, 2009
I read almost all of the reviews and made modifications based on them; and here they are (and what I did...and it came out absolutely delicious!): (1) add salt, pepper, and 3 cloves minced garlic, (2) double the soup (3) use Golden Mushroom, NOT cream of mushroom! (4) reduce the cooking time to about 5-6 hours on low, (5) use 2 oz cream cheese and a dollop sour cream (6) add a bullion cube, (7) add a half packet of onion soup mix (8) add sautéed mushrooms about 1/2 an hour before serving. Mine came out rather thin, so it might help if you coat the meat in flour before cooking it. Oh, and I used Venison instead of beef, and none of my family could tell. I know this isn't true to the original recipe, but I trusted the other reviews and I’m glad I did! 5 stars to the modified recipie, but 3 to this basic (and rather bland) recipie! (Special thanks to Jillybean14 and MomSavedbyGrace!)

Chicken Makhani (Indian Butter Chicken)

Reviewed: Jan. 27, 2009
This was fabulous! I made it for my family, and my father LOVED it! (He's really picky!) You DO need a least a pinch of cayenne in the sauce to bring out the flavor.

Bou's Chicken

This was horrible! It tasted like an over-sweetened cocktail sauce, and no matter how many spices I put in I couldn't combat the tooth-aching sweetness of the sauce!

Slow Cooker Venison Roast

Reviewed: Jan. 11, 2009
I added a little more than 1/2 cup red wine and a handful of sliced fresh mushrooms to this recipe, and it was FABULOUS! No-one could tell it was venison (which is helpful, as my sister refuses to eat it!)

Apple Crisp III

Reviewed: Dec. 15, 2008
It was quite tasty, but it came out liquidy. The problem lay in the apples used however. I suggest using only firm, tart apples for this (like granny smith) and veering away from any red delicious hybrids.

Delicious Ham and Potato Soup

Reviewed: Nov. 2, 2008
It came out a little thinner than my family likes, so next time I'm going to cut out a cup of water to get a chowder-like consistency. I also mashed the potatoes a little after adding the milk. Quite good.

Downeast Maine Pumpkin Bread

Reviewed: Nov. 2, 2008
I made this in my Culinary class for bread, and it was so good my teacher made it dessert instead! We put sliced peaches and spiced whipped cream on slices of this, and we just couldn't get enough! I got 2 9x5 loaves, and didn't change the recipie at all.
