Slow Cooker Cilantro Lime Chicken

You know it's good when everyone stops talking while they're eating! I also used reduced sodium taco mix, and added corn and the lime juice the last hour of cooking. I made another batch the following day with pork. Excellent with either meat. I served it with tortillas, sour cream and mildly seasoned pinto beans on the side. Thanks for the recipe.

Apricot Brown Sugar Ham

5 stars for flavor and simplicity! I used prepared mustard to taste, approx 1T. I've never purchased dry. I am not a big fan of apricot, but it works beautifully here! Thanks for the recipe!!!

Six Can Chicken Tortilla Soup

Excellent recipe! The picky husband who thinks he's too good to eat canned foods never turns down a bowl if this. Gets 5 stars not only for taste, but ease of preparation and versatility. Used fresh chicken with the skin, (didn't have canned today) boiled it down to make the broth, removed the fat and shredded it prior to adding other ingredients. Stirred in half a pack of taco mix left over from another recipe in place of canned broth. so it wouldn't turn out too salty. Can't go wrong with this one!

Carrot Cake III

I have never been fond of carrot cake, but this is "the one." Easy to prepare; took me a little longer because I shredded the carrots just before combining the ingredients. I didn't think the 13x9 would be large enough for a work potluck, so I made a 2nd layer with box cake. Never again! The taste, texture and moistness of this cake put the box mix to shame. Only change was substituting brown sugar for white. Thanks for the phenomenal recipe!!

Royal Icing II

This was so simple I was able to mix the icing and put up the house walls within 45 minutes! That's pretty good considering this is my first gingerbread house. The consistency is perfect. I mixed for 9 minutes. Taste wasn't bad either! Can't wait to use again.

Chocolate Butter-Creme Frosting

Great frosting!! I am not a chocolate fan, I made this for a friend's cake. I couldn't stop sampling this as I prepared it. I used an extra block of chocolate to make it extra fudgy. (A recipe has to knock my socks off to give it 5 stars.) Wouldn't hesitate to make this again. It gets 5 stars for ease of preparation.

Cake Mix Cookies VIII

It's a brownie cookie! Fudgy, sweet, soft. So easy to prepare I almost felt guilty! I won't give anyone else the recipe, they think I made them from scratch. Don't start eating these unless you're prepared to gobble up more than one. Extra special with milk.

Cranberry Bars

These were really good; moist, flavorful NO boxed cake mix taste! I used canned whole cranberries, and butter instead of margerine. Best if eaten within 2-3 days, after that the top tends to get soggy. I am going to make more with a different fruit and cake mix flavor. Thanks for the recipe.

Kickin' Collard Greens

Excellent. Just the right balance of flavors. The only variations I made were more bacon and onions, and a dash of apple cider vinegar. I don't think I'll ever prepare these any other way. Thanks for the recipe!

Great Pumpkin Dessert

I will be the first to admit I'm not fond of pumpkin pie. These knocked my socks off! So easy and quick to prepare; I've made these twice in the past week, exactly as directed and they have been gobbled up. I did leave them in the oven 5-6 extra minutes. On the second batch, I used pecan halves instead of chopping them up. Excellent fall/holiday treat. Thanks for the recipe!

Salsa Chicken

This was even better than the last time I prepared it. I used chipotle seasoning mix, which I didn't measure, just sprinkled enough to lightly cover both sides and a shredded mexican cheese blend. The type of salsa can make a tremendous difference. Use one that's rich in flavor, as baking will alter the intensity. Thanks for the recipe.

Mexican Corn on the Cob (Elote)

I prepared this dish, but I used frozen corn on the cob and shredded parmesan. It was still tasty. The next time the grill is fired up, I'll be sure to include this on the menu. Thanks for the recipe.

Oatmeal Butterscotch Cookies

I followed the recipe to the letter, but for some reason, they turned out crumbly and I had trouble removing them from the pan. They were much easier to handle after letting them cool. Yummy; I will try the recipe again, it's worth it to get the right consistency. Thanks Jolene

Angel Shrimp Pasta

I was skeptical when I tried this recipe; I'm not a big fan of shrimp or pasta but wanted to make something different. Boy, was I surprised! I didn't have any processed cheese, so I used shredded parmesan and tossed in some shredded pepper/jack to round it out. And it was even better 2 days later as leftovers. Will definitely make again.

Morelos Salsa Verde

Maybe I did something wrong, but this salsa just didn't do it for me. It tasted as if it were missing something, and I added chopped onions. Perhaps I have grown accustomed to the manufactured green salsa in a jar (egad!) Thanks for the recipe though.

Avocado Shrimp Ceviche-Estillo Sarita

Superb. I used half lemon juice, half lime and quartered jumbo tiger shrimp. I let it sit for 15+ mins while cutting up the vegetables. I added 2 chopped jalapenos and cocktail sauce the the ketchup blend and served it with small quesadillas instead of crackers to make a meal of it. The picky husband now says he won't eat shrimp salad from the restaurant again, as this one surpassed it. Thanks so much for the recipe.

Sausage Casserole

My first breakfast casserole! I was a little skeptical when pouring the mixture into the pan, but I was very pleased with the taste. I added an additional egg, and I used thawed,drained o'brian hash browns. I also baked the 'crust' for 30 mins before adding the filling. Will be making this again for special occasion. Thanks for the recipe.

Buttermilk Chocolate Chip Cookies

A keeper. I skipped the walnuts,then compensated with more chips. Next time I will try different combinations of chips, etc. Watch them carefully though. Just an extra minute or two will make the bottoms too dark. Thanks Robin.

Peas with Mushrooms

I didn't follow the recipe exactly, I halved the salt/sugar amounts and used 1T of butter. A nice change from plain old peas! Next time I will only use a pinch of thyme. I love seasonings, but I want them to enhance the dish, not overpower it. Thanks Gail!
