Pork Medallions with Balsamic Vinegar and Capers

Yum! Only issue was it took longer to cook than stated. I cut the pork to 1 1/2 inches but perhaps they were too thick. Had to add a little water as the sauce was cooking down too much witht he added cook time. Will definitely make again, but with a bit thinner medallions.

Jalapeno Popper Spread

Delish! I used 1/2 mayo 1/2 sour cream per some other reviewers suggestions. I used way more jalapenos than the recipie called for...at least double. I may even add more next time. I like things with a good kick! I also mixed the parm cheese in instead of putting on top. Made this for a girls night and they devoured it! Might try adding some cheddar next time.

Yum! Yum! Love the crispy leaves that fall off. Wish they would cook quicker as I can't wait to eat them. They are great cold as a snack also!

Really good and relatively easy. I made this for my husband to bring to a Patriots game..next time I will add more beef and less sausage since I don't care for sausage.

Swordfish a la Siciliana

Love this! I leave out the raisins as I don't like them...still wonderful. I serve it with white rice. Made it for a dinner party and everyone raved about it...even those who don't really care for swordfish asked for the recipe.

Ginger Glazed Mahi Mahi

Love this! Very easy...my mahi fillet was a bit thick so I had to cook it longer than stated. Served with rice and baked asparagus with balsamic butter from this site...yum!

Absolutely Fabulous Greek/House Dressing

Love this dressing!! I scaled it to 4 servings...made it in a "Good Seasons" cruet and just shook it all up. I didn't have dijon mustard so I used what I had which was French's bold & spicy. Still turned out wonderful!!
