Banana Oat Muffins

These were AMAZING! I could not get enough of the banana flavour. The oatmeal also added an inviting texture. I used low fat vanilla yogurt in place of the sour cream, since that was what I had on hand. It worked great! I also used 1 tbs. of baking powder b/c I had no baking soda. Unfortunately, I did not have any walnuts either, but the muffins still turned out great. Full of flavour--thank you so much for sharing this recipe :)

Chocolate Chocolate Chip Muffins

I was lacking quite a few ingredients for this recipe, but these muffins still turned out great. For those of you who are kind of poor these days, the following things might work for you: I did not have any sour cream per previous reviews, so I added 1 egg and 1/4 c. oil to make them more moist. I did not have any baking chocolate or cocoa, so I melted 3/4 c. semisweet chocolate chips with the 1/3 c. butter. I used milk instead of buttermilk, as suggested by previous reviews. However, I only had powdered milk, so I used 3/4 c. water and 1/4 c. powdered milk. Since there was extra liquid in the batter from the extra egg and oil, I used 2 c. flour. I am a chocoholic, so I added 1/2c. extra semisweet chocolate chips. A 1/2 c. of pecans was a good addition, too. Hope this helps those who did not have all the ingredients :) Great recipe...thanks!!

Shortbread Cookies II

These cookies were fantastic! They remind me of the wonderful shortbread that I get in Maui, and they are sooooo easy to make. I did not have a cookie press, so I rolled the dough into walnut sized balls, and flattened them with my thumb. I also quartered the recipe, since I only had one stick of butter. It worked perfect, especially with the addition of mini chocolate chips:) If you make these with margarine (I used Smart Balance in a test batch), the texture stays the same, but the cookies take on a margarine flavour. It really is best to use butter for these cookies for taste purposes. If you do not mind the margarine flavour, less cholesterol, healthier fats, and some omega in your cookies, then you can use Smart Balance. Either way, I love these cookies. Next time, I will try mini chocolate chips, in addition to dipping them in chocolate. Thank you so much for sharing this recipe, Sally :)

Coconut Cream Pie VI

This was a pretty good coconut cream pie recipe. I followed the recipe as it was written with the exception of two things: putting toasted coconut on top, and adding a little bit of water to the cornstarch (then thoroughly mixing the cornstarch and water together to prevent lumps from forming). There are a few things that I would change to make this recipe a 5 star recipe: -Use twice as much cornstarch -Use twice as much coconut inside of the pie to give the pie a better coconut flavor. -Cut the Vanilla down to two teaspoons. In my opinion, four teaspoons gave the pie too much vanilla flavor. -Put between one and two cups of toasted coconut on top of the whipped cream. The toasted coconut on the top makes the pie complete. Again, I think that this is a good pie without those changes, but it would be a spectacular pie with those changes. Thank you :)

Peanut Butter Cookies IX

These cookies are absolutely phenomenal. I have never made PB cookies with chocolate chips, but these cookies are even better than I thought they would be. Even w/out chocolate chips, they make a great PB cookie. I am guilty of changing the recipe a tad per the previous messages of other reviewers, however. I used 1/2 cup more PB, 1/2 cup of each type of sugar (brown sugar was packed), 1 cup of All-Purpose flour (did not have any Whole-wheat flour), and 1/2 cup of rolled oats. My reason for putting in half of the oats was b/c I have never used oats in PB cookies before. I will try a whole cup of oats next time because This was the best cookie dough ever--so light, fluffy, and Peanut-buttery with the perfect consistency. After 8 minutes in a preheated oven at 375 degrees Fahrenheit, these cookies were soft, gooey, melt-in-your-mouth good. I cannot stop eating them! My first batch was a little crumbly during the transfer from cookie sheet to cooling rack. I found that I just needed to wait about ten minutes for them to cool before taking them off of the cookie sheet. This may sound obvious, but I have gotten away with taking many a cookie off the cookie sheet after waiting only a minute or two for them to cool. Crumbly or not, these truly deserve 5 stars!! Baked Teriyaki Chicken

This recipe was great!! I used 2 skinless boneless chicken breasts, an 8x8 pan, and 1/2 sodium soy sauce. I set aside most of the teriyaki sauce to use during and after baking. I baked the chicken in a preheated oven at 375 degrees fahrenheit for 30 minutes. Before I put the chicken in the oven, I put a little bit of water in the bottom of the pan, and poured some of the teriyaki sauce over the top of the chicken. I baked the chicken for 15 minutes. Upon taking out the chicken, I drained off some of the liquid. Then, I flipped the chicken and poured some of the reserved teriyaki sauce over the chicken. After that, I put the chicken back in the oven for 15 more minutes. When those 15 minutes were up, I poured the remaining reserved teriyaki sauce over the chicken and served. The sauce tasted great, and the chicken was very tender. The chicken went great with chopped pineapple and grilled veggies on the side. Thank you so much for this wonderful recipe! Now I can make teriyaki chicken myself instead of buying it at a Japanese restaurant. :)

Easy Biscuit Mixture

This recipe made the best biscuits for Thanksgiving :) I scaled the recipe down to 6 and put 1 cup of milk to make the dough, as was mentioned in Roxyjas' review. To make the biscuits a little more healthy, I used smart balance as a substitute for shortening. It worked great. Thanx :)

Cream Soup Base

This recipe is so simple, yet it makes awesome soup everytime :) I have made stew with it, substitutiong beef bouillon for chicken bouillon...as well as cream of mushroom soup for my chicken stroganoff. The cream of mushroom was the best yet. Thank you :)

Monte Cristo Sandwich

Everywhere that I have eaten a Monte Cristo, the sandwich has always been deep-fried. This recipe is a nice alternative, and the sandwiches are still just as good with a side of jam. I also experimented with using another meat and cheese combination; smoked turkey and cheddar worked well. Thanks for the recipe
