About this Cook
I spend lots of time cooking for my husband and my son, and as I love to entertain, I'm always looking for a great recipe to share with guests as well. Where my real passion lies, though, is with baking. I love to bake - bread, cookies, bars, pies. Any excuse to use my KitchenAid mixer is good enough for me.
My favorite things to cook
I make muffins every week, and I'm always sending my husband off to work with cookies, bars and quickbreads. My favourites are things that are healthy and delicious, so I'm always looking for new ideas in that respect.

Carrot, Tomato, and Spinach Quinoa Pilaf
Very good with a few changes. Instead of fresh tomato, I used a can of chopped Italian style tomatoes. I also added the carrots (i used two instead of one) with the quinoa so they'd cook more. Didn't have thyme so I didn't use any. Altogether a delicious and healthy dIsh! Thanks!

Apple Crisp II
This was delicious! Thanks for a great recipe. The only things I changed were as follows: First, I tossed the apples in the sugar/cinnamon mixture. I used only 3/4 cup of white sugar because I like a bit of the apple's natural tartness. I add 1/3 cup of coconut to the topping. I didn't melt the butter, I cut it into the crumble mixture so it would be more crunchy. And, I used 1/4 cup water as opposed to 1/2. Altogether, absolutely amazing!

Beet Salad with Goat Cheese
This was delicious - I added way more nuts, though, because they're so good! I didn't bother with the plating, either. I just threw it all together in a big bowl. I did find there was way too much dressing as well - I think you could half it and there'd be more than enough.
