Blueberry Zucchini Bread

I just tried this recipe and followed it as per the directions except I used Splenda instead of sugar. It turned out surprisingly well. It was probably a bit more dense than with sugar,but as a diabetic it was wonderful and I appreciated being able to have a taste.

Corned Beef and Cabbage

I made this today for St. Patrick's Day. It was the best ever. The corned beef was perfect and all of the veggies were done. I cooked it 6 hours on high and found the way it called to layer it made a difference. The meat was tender but not falling apart which was perfect. This is a keeper for next year.

Sweet Irish Bread

I made this today for the first time and my family loved it. We had corned beef, cabbage, carrots, potatoes and this bread. What a treat! The only change I made was using splenda instead of sugar. I used the same amount it called for. It turned out great! Will definitely make it again next year for St. Patrick's Day.

Fluffy Pancakes

Made these tonight for dinner for FAT TUESDAY. I doubled the recipe for my family (3) which was fine. The only thing I changed was to use Splenda instead of sugar because I am diabetic. They were delicious. My daughter the picky eater said they were better than the box pancakes.

Chicken Marsala

My family loves this recipe, I made it with 5 boneless chicken thighs, and doubled the sauce recipe. I did had a about a tablespoon of poultry gravy mix to thicken the sauce a bit. Using fresh mushrooms makes a huge difference because the first time I made it I only had canned. I had it with mashed potatoes and grilled asparagus. The sauce works well on potatoes. Will make again soon!

Traditional Salisbury Steak

I made this tonight for dinner but I needed 3 steaks, so I doubled the sauce. I knew I would want some additional gravy for mashed potatoes. I also made asparagus with it. My family loved it. I did substitute the flour added to the sauce with brown gravy powder. I think it gave it additional flavor. No flour or beef bullion was added to the sauce because of the brown gravy substitution.

Pan-Fried Asparagus

I made this tonight to go with my Honey Roasted Red Potatoes and Burgandy Pork Tenderloin. What a nice meal. The asparagus was easy and tasty. Will definitely make it again.

Burgundy Pork Tenderloin

I made this tonight for the first time and my family raved about it. I followed it pretty much as written except I used red Sangria as my red wine because that is all I had. I also added one packet onion gravy mix along with the packet of brown gravy mix. It was wonderful and so easy to make. I did find that my onions were still a bit crispy so you may want to cook them a bit before baking with the meat. I made with two other recipes from this site Honey Roasted Red Potatoes and Pan fried asparagus. Made a nice meal.

Slow Cooked Apple Brown Betty

I made this tonight and everyone loved it. The only things that I did differently: I used wheat bread(all I had), splenda brown sugar, I added a dash of vanilla. I also cooked 2 hours on high instead of 3 hrs on low. It came out fine. Will definitely make it again.

Leftover Ham -n- Potato Casserole

We tried this last night and I wish I had taken a photo to post bc it looked great. Slight changes just to speed it up. We used 2 cans of canned diced potatoes and a can of peas. It was delicious and very easy. Great way to use leftover ham. Worth a try. Thanks for posting!

Potato and Cheddar Soup

I made this for dinner tonight for the second time. I pretty much made it just like described but I added a dash of seasoned salt and a bit of velveta along with the cheddar cheese. When I made it the first time it really wasn't enough for my family of 3 adults. This time I doubled it and we even have a bit leftover. We really enjoy it along with some corn bread for dinner on rainy nights.

Eclair Cake

My family loved this cake. I couldn't eat it because I am diabetic however, I think next time I will try it with sugar free cool whip, pudding and frosting. The graham crackers don't have much sugar. Definitely easy and you can keep the ingredients on hand.

Roasted New Red Potatoes

This was super easy and the potatoes make a great addition to the meal. Red potatoes are so sweet and the olive oil just adds to the taste. I cut mine in small pieces and put the potato side down so they get crispy.

Baked Pork Chops I

My family loves this recipe. The pork chops no matter what variety come out super moist. I make mashed potatoes with it because the sauce makes a good gravy. I haven't changed a thing, we like it just the way it is.

Bread Pudding I

I have tried numerous Bread Pudding recipes but found this one super easy and perfect every time. I searched for a rum sauce recipe that was like my mother in laws but finally found that my husband prefers warm cooked vanilla pudding drizzled on top and you could add a dash of rum extract if you like. Worth a try if you like old fashioned bread pudding

Delicious Ham and Potato Soup

I made this tonight and I just love this recipe. I pretty much follow the recipe except that I add about 2 oz. of Velveta Cheese. I also sometimes use a 16 oz can of diced potatoes to speed up the cooking process. Makes a creamy hearty soup, great for a night like tonight when it is snowing!

My family loves this casserole and so do I because when all else fails these ingredients I always have on hand. I pretty much follow the recipe except I make a few more potatoes bc my family likes them. Great leftover to take to work.
