Fluffy Cake Doughnuts

Just right for a doughnut that is baked! It has a nice flavor. I have tried the chocolate iced and the almond iced. I used less of the almond flavoring, but both turned out very tasty. Tastes so much more wholesome than the deep-fried counterparts.

Honey Whole Wheat Bread

This is my new gold standard recipe. I slice it thick for toast or thin for sandwiches. I can't buy individual portions of yeast, so one package of yeast is 2.5 tsp. I mix everything in my bread maker on the dough cycle. Then I put the dough into a bread pan and bake in a 375F (190C) oven for 30 minutes. I have made nearly a dozen loaves with this recipe and it has been perfect each time!

Evacuation Tuna & Pasta Salad

I was looking for a tuna and pasta salad recipe. I came across this recipe the day after a large earthquake struck us. The title caught my eye and I had to try it. My husband and I really enjoyed this. I can't get lima beans, but I used boiled soybeans instead, and it was really good. I also used try colored elbow macaroni for more color. I plan on using this for a pitch in sometime.

Clone of a Cinnabon

Out of this world delicious. The real test came when we couldn't eat all of the rolls. I put the leftovers in the fridge, and over the next three days my family finished off the cinnamon rolls. We warmed them in the oven and they were just as good as the first day. This is definitely a keeper!

Tofu Lasagna

This is definitely a keeper. I did freeze the tofu which helps the tofu to be firmer. I used an extra cup of sauce and did not use the milk at all. I also threw in a cup of ricotta (which I can't really get, so I really used a cup of cottage cheese), and the family said they couldn't tell that it had no meat.

The Extreme Cherry Cake

This was a good moist cake. I don't have access to maraschino cherries, but I did use canned cherries that I found in my local grocery. The cherries were packed in water, whick I used in the recipe. Overall, I don't think the cake was as sweet without the maraschino cherries, but it worked really well. I used a buttercream icing with this cake, and my company raved about the cake and icing. If I find maraschino cherries, I will definitely try this recipe using those.

Bread Machine Garlic Bread

Very good. I made a few adjustment from the beginning. I used 1 cup of warm milk instead of the water and the powdered milk. I used 1 Tbs. of olive oil instead of the butter. I added 1/2 Tbs. each of died basil and oregano. I used 2 cups wheat flour and 1 cup white flour. I also used three cloves of Garlic, minced. It was most delicious out of the bread maker, hot, and with butter spread on the top. The only disappointing thing was waiting for the bread maker to finish baking the bread.

Very good. I used chicken breast meat and took the skin off before cooking. We enjoyed this dish fresh carrots and boiled soybeans (edamame). I also served it in a Japanese lunch box.

Buttercream Icing

Soft Sugar Cookies IV

These were really good. Before I baked the cookies, I used the back of a spatula to push down the cookies. This made the cookies look better and prepared them to be iced if you opt to do that. I used the Butterream Icing recipe that I had left over from another recipe, and the cookies were very delicious. Very easy to make and very tasty, I will definitely use this recipe again.

English Muffin Loaves

I absolutely loved this recipe. I live where I cannot get English without going to a special store and paying an arm and a leg for 4 muffins. This loaf recipe is perfect. I spent way less to make this recipe than it would cost me for just the 4 muffins. The only thing I did differently was to dust the top with cornmeal too!

Pie Crust III

This is so easy. The cold water does need to be very cold. The key is to not over handle the dough. This recipe can be frozen and used at a later time. I also refrigerated overnight and got good results. I love being able to use canola rather than butter or shortening. I also love the ease of just pushing into the pie pan rather than rolling out. When I do roll out, I find it is easiest to roll out between to pieces of plastic wrap. This is definitely a keeper.

Best White Icing Ever

I was in a pinch with my frosting situation, when I came across this recipe. I was able to make up the frosting and frost the cake in less than 20 minutes. It is not just quick, it tastes great too!

Apple Chicken Stew

Wonderful! I didn't thaw the meat ahead of time, so I cooked the chicken on high in the crockpot for two hours, then I cut the chicken up and put it back in the pot with everything else. Then I cooked it on low for 10 hours, so I could serve it for an early lunch. It worked out really well, and I will use this recipe again. Next time, though, I might use the suggested cornstarch to thicken it a bit.
