Pumpkin Rice with Apricots

Reviewed: Nov. 26, 2006
This was a great change from the regular mashed potatoes and pumpkin pie for Thanksgiving. I used 3/4 cup of rice and cooked it for only 12 minutes at first to make it more like a pilav. I used only 1/2 cups of apricots. I did add 1/2 cup of slivered almonds which gave the recipe a much more crunchy texture. The school principal's wife asked for the recipe.

Sarah's Applesauce

Reviewed: Jan. 12, 2005
I live in a country without applesauce. This recipe has saved my life. It's now my son's favorite school snack, and since it is so fast and easy to make he can have it all the time.

Pumpkin Chocolate Dessert Cake

Reviewed: Jan. 12, 2005
I have made this recipe FIVE times since I first saw it two months ago! My family doesn't even like chocolate, but they gobbled this up. My son even requested it for his birthday cake! I live overseas in a country that doesn't have premade pumpkin puree or applesauce, so I made them myself (thanks, phatcat, for the Sarah's applesauce recipe!). It does take my cake at least an hour to cook, but it's still moist, and I like for my frosting to cool a bit and become more solid than a glase. The last time I made the frosting I even added some caramels to make it even sweeter. This one is a keeper!

Roast Goose with Port Gravy

Reviewed: Jan. 12, 2005
I served this meal on Christmas Eve to my typically Midwestern family. They couldn't believe how juicy the goose was without being greasy, and my mom loved the gravy the best! I did turn the goose over for about 20 minutes to get it brown all over, but I will use this recipe again!

Boiled Custard II

Reviewed: Dec. 23, 2003
I just want to say how tickled pink I am with this boiled custard recipe! I live in Turkey, and wanted the delicious flavor of the custard my southern grandmother and mother used to make. Let me tell you, this hit the spot! I am also delighted with the ease it can be made; no slaving over the stove like my mom did. Even my Turkish babysitter is hooked on boiled custard now! I now have a little bit of southern Christmas so far away; thanks again!

Savory Garlic Marinated Steaks

Reviewed: Oct. 18, 2000
Out of this world! I didn't think that I would like the honey in the marinade, so I halved it, but it was fantastic. I only had six hours to marinade, and it was still tendr and juicy! Can't wait to use this recipe again! (Oh! My three-year-old liked it too!)

Best Buttercream Frosting

Reviewed: Aug. 11, 2000
You absolutely HAVE to have an electric mixer to make this recipe, or else the consistency does not turn out right. Also, check the sugar amount; my husband found this frosting so sweet, he would not finish the chocolate cake it was on, and I've never seen my husband turn down chocolate.

American-Italian Pasta Salad

Reviewed: Aug. 11, 2000
Delicious!! I didn't even put the Italian sausage in the recipe, and I still loved it! That salad dressing is so good, I'm going to try it on a regular green salad!

Depression Cake III

Reviewed: Aug. 11, 2000
This cake hit the spot when I wanted something sweet but didn't have any eggs in the house. I can't believe how light, fluffy, and moist it turned out. It did take a long time for the coffee mixture to get to room temperature, but that's probably because I baked this cake on a very hot summer day. I think that this recipe would be a good one for people who don't bake to try, since it turned out fantastic even in my quirky oven!

Can't Get Enough Caramel Cookies!

Reviewed: Mar. 30, 2000
This recipe is great! It's easy enough for the students in my weekly cooking activity to make, and delicious enough for the teachers to ask for it every week. Kudos all around!
