Cream Cheese Brownies III

Reviewed: Jan. 27, 2007
I brought these brownies to a party where there were several other desserts including brownies. These were gone first. Delicious. I followed the suggestion of another reviewer and made a bit extra of the cream cheese mixture. Other than that I followed the exact recipe. I baked them in a 9 x 9 pan so baked them for 25 minutes, turned off the oven and baked for another 5. Perfect. Easy to follow instructions.

Salmon with Tomatoes

Reviewed: Mar. 17, 2007
Great salmon recipe. Salmon is not my favorite fish but I am trying to eat more of it because of it's benefits. This recipe did it for me. I kept everything pretty much the same except like many of the reviewers I didn't have garlic oil which was solved easily by adding fresh garlic to my olive oil and I also omitted the butter since I am trying to lose weight. Thanks for sharing.

Creolized Stuffed Chicken Breasts

Reviewed: Sep. 17, 2007
These chicken breasts were such a hit in my house I had to double the recipe and make them again the next week. I substituted Italian sausage (removed from its casing)and it tasted just fine. When I made it the 2nd time I tripled the stuffing so that I would have a lot to put on top and surround the breasts. My teens even ate these cold the next day. Thanks

Simple Peanut Squash

Reviewed: Sep. 17, 2007
Plain and simple but delicious. My only problem was that after 35 minutes, the pieces were still very hard....I did follow the recipe exactly and my oven temp is right on. After an additional 15 minutes it was perfection Thanks....tasted much better than boiling

Salsa Chicken Rice Casserole

Reviewed: Jan. 17, 2009
Huge hit at my house. I rarely make a recipe that is as popular as this one. Usually someone does not like something. Everyone loved this and are requesting another casserole. The only change I made was using Minute Rice since I didn't have regular. Love it

Meatloaf Cordon Bleu

Reviewed: Mar. 2, 2009
I made this recipe according to directions with just a bit more ham and cheese since my family loves cordon bleu. It was delicious and people fought to take the small leftover piece for lunch. Another great all recipe for me

Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

Reviewed: Jun. 9, 2009
I have made these muffins twice now and everyone seems to like them. I used the strawberries the first time and they were OK. I much prefer fresh blueberries which gave the muffins more "pop". I also used canola oil This recipe will be in my permanent file

Good, easy recipe. I used light mayo and a bit less sugar. I will try the splenda the next time. Also added raisens which are a favorite at our house.

Sweet and Sour Meatballs

Reviewed: Feb. 1, 2010
Easy, easy, easy and delicious. I love using the slow cooker because it takes too much time to fry small meatballs. I did use a bit of bread crumbs but sure recipe would have been fine without

Parmesan Scallops

Reviewed: Jun. 13, 2011
Quick, easy and DELICIOUS. I was looking for a different way to cook my scallops...somewhere between deep fried and baked and this was perfect. I used Panko bread crumbs and Parm cheese and put in a blender so they would be super fine. I still had a problem with the coating staying attached. I didn't try using eqq since I wanted a non-egg taste. I am making them again and will try the Old Bay and the next time the dill. This will now be my "go-to" scallop recipe

Cherry Pie II

Reviewed: Jun. 13, 2011
Well, I must be the odd person out. I had never made a cherry pie using fresh cherries so I made this exactly as written. 2 1/2 CUPS of cherries??? I am an apple pie maker and when I made the filling mixture it didn't look right to me. I did add a few more cherries but it still was not enough. I used a 9" pie plate as instructed but the cherries sat way too low. The finished pie was delicious but too sweet and I love sweet. I did check a bunch of other recipes after I made this and the smallest amount of cherries called for were 4 cups with most being 6 cups/ 2pounds. I did look at the some of the other reviews before makings and no one mentioned this. HELP..WHAT DID I DO WRONG? I won't be making this again.
