I added maybe 1/2 a packet of Splenda to cut the vinegar a bit as other reviews mention. The recipe itself is pretty good but, it needs just a tad bit more of "something" (zip, bite, depth). Definitely a keeper and I will play with the ingredients in the future.

Apple and Spice Cookies

When I combined the sugar/shortening & dry ingredients together the batter was extremely dry and I could not imagine 1/3c of cider (I substituted juice for cider) making much difference. So I added 1/3 cup unsweetened applesauce as per Betsy Crocker's review had suggested and used the electric mixer to completely combine everything. The batter was very sticky and moist. The cookies spread and thinned out a lot! I could only fit 12 per sheet. Being so thin I only baked for 9 mins. They were very soft and need to cool on the baking sheet for 4 mins before removing them. They taste delicious but are not the prettiest cookies. I will need to experiment a little more to get the consistency correct.

Campbell's® Easy Chicken and Cheese Enchiladas

Yummy & easy! I followed the recipe but, used all the healthier options. Healthy Request soup, non-fat sour cream, low fat cheese and whole wheat tortillas. Definitely a go to recipe. Goes really well with Spanish Rice II. http://allrecipes.com/Recipe/Spanish-Rice-II/Detail.aspx

Spanish Rice II

This is a recipe I use all the time! It is always yummy. I tone down the chili powder depending on how spicy the main dish is.

No Bake Peanut Butter Pie

Needed a dessert for a summer party and I did not want to turn on the oven. Very simple to make. Used a graham cracker crust and topped with PB cups. Tasted good but, not my favorite pie in the world. I think it would be a huge hit with kids though!

Rich Chocolate Truffle Pie

Very good and VERY chocolatey!!! The first time I made this recipe I used a ready made graham cracker crust. It was delicious but too decadent for 1 serving. This time I used individual shortbread tartlet shells and phyllo dough cups, much better!!! Topped them each with a raspberry. I preferred the shortbread the best. The taste of fresh fruit and shortbread balanced the taste of the chocolate perfectly.

Cajun Appetizer Meatballs

Very easy to make and were a HUGE hit. Many people either asked for the recipe or asked me to bring it to their next get together. Only substitution I made was apricot preserves instead of peach.

Layered Mint Chocolate Fudge

Great quick recipe. Very easy to make. Was a little confused because I was unsure what the melted consistency should be (1st time fudge maker). The mixture was very thick but completely melted. I only did 2 layers; chocolate on bottom and mint on top. Definitely let the layers cool for longer than 10 minutes.The peppermint was a little too strong for me but, my husband disagreed. I used the white chips. The ingredients in the confectioners coating was off putting(palm kernel oil). Will definitely make this again.

Chocolate Bourbon Pecan Pie

If there was a sixth star I would have given it! Awesome, wonderful, great, incredible! So simple and easy to make and was an absolute hit. Followed the advice of the other reviewers: 1-used deep dish pie crust, worked perfectly 2-cut down bourbon to 2 tbs (will use more next time) 3-cut sugar to 3/4 cup 4-laid down a single layer of chocolate chips at the bottom of the crust (did not measure, just a single layer covering the crust bottom) instead of mixing them in the filling.

Fra Diavolo Sauce With Pasta

Quick and simple! I always have these ingredients in my kitchen. This will be an easy dinner to throw together last minute. I used a heaping teaspoon of crushed red pepper. Which was a little much. So I cut it down with 2-3 ladles of pasta water. I also used one 28oz can of whole peeled tomatoes. And I omitted the scallops all together.
