Irish Potato Casserole

I hate to rate anyones recipe this low but this one would have been great if you triple the potatoes, halve the butter and blanch the potatoes after you shred them. Even after cooking them for an hour and a half it was still like eating raw potatoes. Gross. The overall flavor was really good. I would have rated higher if the texture had been better. However my husband did like it but he would eat most anything.

Michelle's Blonde Chicken Chili

Amazing!!!! I couldn't believe how much I liked it. The only things I did differently was nix the onions...I HATE onions and I used ground chicken. When I calculated all the ingredients it actually came out to 315 calories per serving when broken down into six servings. Not sure why my calcs are a lot lower. I am guessing it is because the ground chicken has less calories and fat. Right now I am experimenting with a vegetarian version. Which looks and smells just as good!

Oatmeal Blueberry Muffins

These muffins are delicious however I used the recipe as a guide only since I wanted to make them healthier. I managed to get them down to 91 cal. each with practically no fat. The Changes I made are: Subbed 1 cup Whole wheat flour for all purpose Subbed 1/2 cup baking Splenda for sugar Subbed 4 oz Applesauce for Oil Used only egg whites and Skim milk Added Vanilla

Peanut Butter Cookies VII

These were fantastic. Not sure why others had such a problem with them being dry. Mine came out moist and delicious. The only thing I did different was used no salt added peanut butter but I added a 1/4 tsp extra of salt to compensate. Thanks for a great easy recipe Amy!

Chocolate Ganache Icing

Yummy! I used Dove Dark Chocolate and left out the Brandy. If you don't love dark chocolate I would recommend using half dark half milk chocolate to cut the bitterness.
