Grilled Sweet Potatoes with Apples

I paired these with the Chinese Pork Chops on the barbeque. Turned out great and the kids liked them. I substituted brown sugar for white.

Moroccan Lamb with Shiraz Honey Sauce

This was an excellent recipe for lamb chops. There are many recipes for the ras el hanout (many that require saffron - which I don't have). I took a basic recipe and modified it with spices I had on hand. This is what I used: Ras El Hanout alla Mark 3 teaspoons ground cinnamon 3 teaspoons ground cumin 2 teaspoons ground coriander 2 teaspoons ground ginger 2 teaspoons ground cardamom 1 teaspoon ground allspice 1 teaspoon ground cloves 1 teaspoon mace 1 teaspoon cayenne pepper 1 teaspoon garlic powder 1 teaspoon dill 1 teaspoon ground black pepper 1 teaspoon Kosher Salt The cinnamon, cumin and red pepper are what are really required, everything else adds to the "complexity" of the flavor. The Shiraz honey reduction was very good (and easy to make) although it took about 20 minutes to reduce.

Shrimp Etoufee III

This recipe was very good. I cut the recipe in half, substituted potatoe starch for corn starch (all I had on hand) and added a bay leaf and 1 tablespoon Worcestershire sauce. Wife and kids loved it. I'm having leftovers tomorrow for lunch.

Chinese Pork Chops

Simple recipe and everyone loved them. I substituted real garlic, marinated the pork chops for 6 hours and grilled them out doors on the barbeque. The chops were about 1" thick and I got great grill marks on them. With the marinade they almost tasted like steak.

Antipasto Squares

These were excelent. I made them exactly as written (I did make my own roasted peppers) and it was a huge hit at bowling night. Very easy to make and they travel well. Will definitely make them again.

Pineapple Stuffing

I used 1/3 cup of butter and 3/4 cups of sugar and everything else as written. This was a side for Easter dinner with ham and turkey. I doubled the recipe and had very few leftovers. This was perfect.

Herb Roasted Vegetables

This was good. I boiled the potatoes and carrots (because of other reviews stating that the the potatoes were under done) for about 10 minutes, then followed the specified roasting times. The dish came out great. I also added about a cup of diced celery too.

Honey Ribs

This was good. I used country style pork ribs and it actually turned into a pulled pork dish. We made sandwiches out of it. I slow cooked it on low for about 11 hours and that was too long because the meat was a little dry even though it made plenty of juice. Next time I'll cook it on low for about 8 hours.

Savory Garlic Marinated Steaks

This was simple and had a nice flavor. I let the steak marinate for 2 days in a ziplock bag in the refrigerator. It was a cheaper cut of meat and I grilled it for 6 minutes (flipping it once) on my George Forman grill. Very tender.

Spinach Rice Ham Bake

This is a good, basic ham and rice casserole. I used fresh spinach instead of frozen and added extra cheese and Italian bread crumbs on top to give it a crust (that worked well). I thought the ham would add enough saltiness but it definitely needs some additional salt and pepper. I would make it again.
