Swedish Meatballs I

YUM! Thanks for the recipe. I followed other suggestions and added a few dollops of sour cream and a dash of nutmeg to the sauce. I ended up with plenty of sauce! I also used garlic bread crumbs instead of the cream of wheat, and added a teaspoon of garlic powder to the sauce. The only change I'd make next time is to mix salt into the meat balls before forming. They could really use some, and I forgot to add it this time around. I will definitely be making this again!

Broccoli Chicken Casserole I

I'm eating this right now. It's very good! I adapted it just a little bit. I boiled the chicken in vegetable broth (would have gone with chicken broth, but I didn't have any on hand). I used 2 cans of the mushroom soup and as another reviewer suggested, substituted 3/4 cup of milk for the mayo. I mixed salt, lots of pepper, a pinch of ginger and a teaspoon of paprika (also suggested by another reviewer). I used garlic herb bread crumbs instead of stuffing because that's what I had. This is really great. What I like most about it is that it's easy to make, and so adaptable. Next time I might include peas and carrots as well. Thanks for the recipe!

Louisiana Sweet Potato Pancakes

These were pretty good. Will probably make again. The only modifications I'd make: this time I used nonfat milk. Next time I'd use at least 2%. That was my own fault. They were a little dull with the nonfat. As for changing the original recipe, I think next time I'll add a teaspoon of cinnamon to the mix!

Eggplant Parmesan II

Excellent! I fixed it tonight and I'm eating it right now. I made angel hair pasta and am eating it topped with the eggplant parmesan. There are a couple changes I'll make next time, though. 1) I will sweat the eggplant, as suggested by others. 2) I will also bake the eggplant longer in the beginning. Perhaps 7-8 minutes on each side. This is a wonderful recipe and I will definitely be using it again!

Roasted Beets and Sauteed Beet Greens

Simple, clean, and very tasty! Next time I might add some herbs. This time, I took another reviewer's suggestion and roasted the beats with carrots. I also roasted some garlic cloves along with it. Very, very good! Will definitely be making this on a regular basis.

Curry Pumpkin Soup

It was OK. I will probably make it again, but I will most likely omit the sugar. I used red curry, which was the best part of the soup because I enjoy spicy foods! Anyway, this was easy to make, with inexpensive ingredients, and very healthy!

New Orleans Chocolate Bourbon Pecan Pie

I love pecan pie. I love chocolate. I love bourbon. But I guess I really don't love it when these three tasty things are mixed together. I only had one slice (and I made two pies). It was OK, but I wouldn't eat it again. However, I'm giving it 5 stars at the request of my friends, who fell head-over-heels for this recipe and devoured both of the pies. So I would make it again for special occasions, but never for myself.

Brown Sugar Meatloaf

Very good! I followed other reviewers' suggestions and cut down on the sugar, the eggs, the milk, and used bread crumbs instead of crumbled crackers. I also added strips of bacon to the top. Not as great as my mom's meatloaf, but nothing ever will be. ;) Will definitely make this again.

Giant Chocolate Chip Cookie

Excellent giant cookie. Dubbed by my friends as 'The Epic Cookie'. I had to use a 12 inch pan. Left a bit of the dough out so there wouldn't be any spillage, do to the slightly smaller pan. No spillage! Will definitely be making this again.

Artichoke Chicken

Amazing!! I highly recommend this recipe. Best chicken recipe I've ever personally cooked. The portions I made were gigantic but my girlfriends and I gobbled them all up. This is definitely going to be a repeat at my place. I didn't change a thing with the recipe. I don't know if I'll bother doing so next time, either. It was fantastic as is, for me.

Homemade Black Bean Veggie Burgers

These are absolutely fantastic. Next time I will squeeze more of the juice out of the peppers/onions and the black bean mash. Otherwise I wouldn't change a thing. These will definitely become a staple for my diet. I think I will follow another review's suggestion and make a batch of these to freeze. Thanks for the recipe!

Penne with Chicken and Pesto

Nice! As others have mentioned, there isn't a lot of sauce to generously cover the pasta (I used angel hair instead of penne). However, I like pasta sauce to be really light, whether it's tomato or white, so the amount was absolutely perfect for me. The only changes I'd make next time would be to use more garlic and more pesto. I bought a wonderful artichoke pesto from Wegmans and it was delicious with the sauce. Thanks for the recipe!

Baked Honey Mustard Chicken

This was so easy to make. It's definitely going to become a regular meal for me. The only change I'd make would be using dijon mustard next time (I used regularly yellow), or chipotle, and less honey. Thanks for this recipe!

Veggie Quesadillas

These were really great! As someone else mentioned, they truly are versatile. I made a few changes just to suit my personal tastes. I used a whole yellow zucchini, two bunches of green onions, the mushrooms, just one can of corn, and half a can of petite cut tomatoes w/ green chilis because I'm not the biggest fan of a lot of chunky tomato. I followed the saute instructions, and then popped the flour tortillas in the microwave for 15 seconds so they'd be easier to fold. I put some shredded cheese on the middle of a tortilla, scooped the veggies on top of it, and then folded it like a chimichanga. I topped it with guacamole and sour cream. Delicious!
