Chicken Capri Pasta

Reviewed: Jun. 13, 2014
So I used this as a base recipe. It's hard to rate based on so many changes. So my rating is based on my changes. I sauteed up 1/2 cup onions, 4 cloves of garlic...added the red pepper and broccoli. Then I put in regular cream cheese (store didn't have cooking creme) and added about 1/2 cup organic free range chicken broth. Added salt and pepper to taste as well as onion powder, garlic salt, and Italian seasoning. I used Capellini noodles as I couldn't find vermicelli. I also cooked my chicken strips separate in the oven. So all in all it turned out pretty good. Family was happy.

Dry Rub for Ribs

Reviewed: Sep. 17, 2011
Followed suggestion of reviewer "sunnydale" with regards to sprinkling ribs with liquid smoke and then putting on the dry rub. Fantastic!!!!! We have made them many times. They turn out perfect everytime. Rave reviews from everyone who eats them. We don't even bother throwing them on the grill as they come out falling off the bones from the oven. Have tried on beef ribs as well as pork. Pork is the best. Serving them today to a crowd of 20.

Roast Sticky Chicken-Rotisserie Style

Reviewed: Sep. 3, 2011
Used 6 lb cut up fryer and oven bag. Was delicious! Hubby and son loved it! I let chicken marinate with rub on it for few hr hours and then cooked it. Only took about an hour and fifteen min to bake. Can't wait too try whole chicken on the rotisserie.

Unbelievable Chicken

Reviewed: Aug. 31, 2011
We've made several times. Follow recipe exactly. We've grilled and broiled the chicken. Both times chicken breast very juicy. We take leftover chicken and add mayo and use our ninja blender and make a creamy chicken salad. Now that's really tasty!

Sage Pork Chops

Reviewed: Jun. 2, 2011
So easy! I had 8 thin sliced pork chops so I just barely browned. Also used "better than boullion" beef base. I just sprinkled on pepper and sage on both sides of the chops (no salt) and simmered in the gravy for 15 minutes only and they were perfectly done and juicy and tender! Also thickened gravy with arrowroot! Flavor was great!!

Brazilian Cheese Bread (Pao de Queijo)

Reviewed: May 3, 2011
Made again...this time using grapeseed oil and mozzarella cheese. Fantastic. Also I found that if you pour the hot oil/milk/water mixture into a bowl that has the tapioca flour in it already it's much easier to mix. Also only used 1 tsp of minced garlic. Also used my hands when adding egg and cheese. They turned out awesome!

Rice Flour Pancakes

Reviewed: Apr. 18, 2011
These were great! I left out the milk (lactose intolerant) and used 3/4 cup of coconut water (get at health food store)...also added 1 tsp baking soda and 1 tbsp brown sugar. I used 3/4 cups of white rice flour and 1/4 cup of brown rice flour. Easy to make and was completely satisfied!

Black Bean and Corn Salad II

Reviewed: Jan. 12, 2011
Huge hit with friends! Tastes awesome. I did take garlic and chop super fine and salted and let sit for about 10 minutes...then smash and make like paste and put in the olive oil/lime juice. Let marinade as long as possible before mixing in with beans and tomatoes and the flavor of the garlic really comes out. YUM YUM!! I also deseeded tomatoes for less juice. I did use cilantro (whole bunch from store) and love it!

Ranch Dressing II

Reviewed: Dec. 13, 2010
Not impressed at all...was worried a whole cup of mayo would overpower the flavor so used only half of cup and still thought it overpowered the taste...So I added more sour cream...followed the rest of the recipe and it's just ok.

Lentil Soup

Reviewed: Dec. 13, 2010
Very good with changes...Used 4 carrots and 6 celery hearts, 4 cloves garlic, 2 bay leaves and doubled rest of spices also per other review I added 1 tsp of cumin and 1 tsp curry. Also used diced tomatoes not crushed and 3 cups of water and 3 cups of chicken broth. Didn't realize till later that it called for 8 cups total of water. But it was very thick and delicious. Left out spinach and vinegar. I did try spinach and balsamic vinegar and didn't like...Family enjoyed very much...thanks for recipe.

Beef Stew VI

Reviewed: Dec. 9, 2010
Awesome recipe! Made many times now. Family loves it! Used red potatoes so they don't turn to mush if cooked too long also used arrowroot instead of corn starch and used "better then bouillon" beef base from health food store as it contains no msg...otherwise followed recipe! Once I decided to cook onions with meat instead of adding later....big mistake... took longer then normal to get beef tender.

Pumpkin Muffins II

Reviewed: Jan. 29, 2010
Family loved them. I added a struesel topping made up of 2 tbsp of flour, 1 tsp cinnamon, 1 tbsp of butter and 1/3 cup of brown sugar. Next time I may cut the allspice in half as I personally felt too strong taste. But as I said the guys liked them. My husband like because not super sweet tasting.
