Herb Grilled Vegetables

Very good. Don't cook for too long or the veggies will get soggy!

Chicken Enchiladas with Creamy Green Chile Sauce

Reviewed: Jan. 9, 2009
This recipe was really great. The sauce was AMAZING! I thought it needed a little salt though. Next time I will probably add some taco seasoning to the chicken.

Chocolate Caramel Candy

Reviewed: Nov. 26, 2008
This is AMAZING! I followed the recipe exactly and it turned out amazing. I didn't have any trouble with the bottom layer sticking like others did. I used non-stick spray, and it came out of the pan perfectly. Definitely cut it into one inch squares because it is so rich!

Chewy Peanut Butter Cookies

Reviewed: Nov. 22, 2008
After looking at suggestions from others, I added half a teaspoon of salt and a third cup extra of peanut butter, and the cookies were amazing! I am at high altitude and baked the cookies at 350 degrees for eight to nine minutes. Love this recipe!!

Too Much Chocolate Cake

Reviewed: Nov. 18, 2008
I followed the recipe exactly (at higher altitude) and came out with a perfect cake. I also baked it at a normal altitude and baked it for 65 minutes. It was a delicious cake!

Slow Cooker Pork Chops II

Reviewed: Nov. 12, 2008
They were good, but too much paprika!! I used twice the amount of chicken broth and half the amount of oil. Next time I will use half the amount of paprika.

Awesome Broccoli Casserole

I used half of a medium onion, and put all of the shredded chesse in the mixture. I cooked covered for thirty minutes, uncovered, and cooked an additional ten minutes. I will eliminate the onion next time.

Marinated Flank Steak

Very Easy! Very delicious. I used low-sodium soy sauce. The flavor was almost too strong for my taste.

Catherine's Spicy Chicken Soup

Reviewed: Feb. 7, 2008
Great! Great! Great! I did not use the whole tomato. I used one can of black beans in place of one can of the chili beans. A huge hit.

Banana Sour Cream Bread

Reviewed: Nov. 30, 2007
Great recipe. I divided everything in half, used two loaf pans and baked at 325 for 1hr 10min. I also sprinkled a sugar/cinnamon/brown sugar mixture over the top before baking. It gave it a little extra sweetness... yum yum!!

Mexican Casserole

Reviewed: Jan. 9, 2007
I made a few changes to the original recipe to add flavor. I added the following spices to the soup mixture: a teaspoon of chili powder, a teaspoon of cumin and a teaspoon of garlic salt. I also used taco seasoning when I cooked the chicken. (I drained the chicken before putting it in the casserole) I also added half a can of diced tomatoes (drained). I used the other half of the canned diced tomatoes to line the bottom of the pan (in place on non-stick spray) It kept the tortillas from getting crunchy as others had mentioned. It was a hit. My boyfriend really liked it. My only complaint was that it was a little too soupy for my liking. Next time I am going to add some drained sweet corn and olives.
