Alfredo Sauce

This is a good basic recipe. However, I built off of this and I have added rotisserie chicken or chicken sautéed with the garlic and a touch of olive oil. I used a touch more garlic and heavy cream-which can be split with half and half to reduce the calories. I also added sautéed portabella mushrooms and fresh thyme.

BBQ Pork for Sandwiches

I used a 3.50 lb pork roast, I was a little worried about all the fat on the meat but it fell right off the roast. I cooked this pork on low for 8 hours and the meat turned out perfectly. Shredding the meat was easy and the end result was delicious.

Chicken Florentine Casserole

This was an easy and delicious dish. Although next time I would use fresh spinach and sauté it first, as I was not a huge fan on the canned spinach. I made a few modifications, I used fresh herbs in replace of Italian seasoning and I omitted the bacon.

Tasty Spaghetti Sauce

This was a great recipe, although I adjusted it a little. Instead of just using ground beef, I used half ground beef and half ground pork. Instead of dried thyme I used fresh and also added fresh oregano and did not crush the bay leaf but instead removed it before serving. Lastly, when I was browning the meat, I deglazed the pan with some red wine. Delicious!

Cream Corn Like No Other

Gourmet Mushroom Risotto

This was my first attempt at risotto and I thought it turned out amazing! I cut the amount of mushrooms in half, for preference reasons, but there were still plenty of mushrooms in the dish. Once I started cooking the rice, I realized that I did not have white wine or enough chicken stock in the pantry, so I improvised with water. The risotto still have plenty of flavor and then I didn't have to worry about it being to salty. I cooked it a little longer than the 15-20 minutes, added just a touch more water than the 6 cups and added about a 1/2 cup of cheese total. Delicious!

Strawberry Dream Cake I

So easy to make, but a little time consuming, however, definitely worth it! I thought this cake was delicious and extremely moist. I used the suggestion from another reviewer and used strawberry cream cheese instead of regular cream cheese, which I think rounded out the strawberry flavor. I was a little leery about the doneness of the cake, since the cake wasn't completely firm and the toothpick wasn't clean-but as someone previously mentioned, that is the way it is suppose to be. The frosting was easy and instead of cream cheese I used mascarpone cheese, it tasted delicious! I received great reviews!
