Buckeye Balls II

Granted, this was my mother and I's first attempt to make buckeyes however, they did not turn out well. We followed the directions exactly as written and noticed while mixing the peanut butter mixture, that it seemed dry and crumbly and we debated on adding more peanut butter but decided it against it & to follow the directions instead. They turned out not having a good peanut butter flavor and I also agree that there is too much confectioner sugar. So far, 4 people have tried them & no one has liked them. I will try another recipe next time.

Pesto Cheesy Chicken Rolls

The only reason I didn't rate this a 5 star is because I altered it. But, I only did a couple minor adjustments & it turned out great. I had bought sun dried tomato & basil pesto & was trying to figure out what to do with it. I sliced my chicken breast in half (length wise) instead of rolling them, coated them with Italian bread crumbs, & then sandwiched the pesto & cheese in the middle of the two slices of chicken. Cooked for written time on recipe but covered it until last 10 minutes. I sprinkled a bit more cheese & some parm on top those last 10 minutes. We all enjoyed & my boyfriends nine year old kept commenting on how good it was.

Best Chocolate Chip Cookies

I feel so bad because this recipe got such great reviews but no one that has ate the batch has seen anything terrific about them?? I followed the recipe exactly, minus the nuts, and thought they were cakey, which I don't expect. My boyfriend thought they could've been more "brown sugary." They seemed runny after mixing & I wonder if refrigerating them overnight before baking would help?? I'll keep looking to try other recipes.

Chicken with Garlic, Basil, and Parsley

We liked this recipe very much. Its very simple but flavorful. The only thing I did different is that I had marinated chicken breast in Italian dressing for a day or so before using it. Red pepper flakes add just enough of a kick also.

Fettuccine with Sweet Pepper-Cayenne Sauce

My boyfriend says this is one of the best new things I've made. We both really enjoyed it but I agree that if you're not a real spice lover, cut back on the cayenne. I made as directed but I did add chicken which I agree made it perfect. I lightly floured & fried chicken chunks & then added the sauce to it. I also used plain spaghetti & it was still very good.

Hot German Potato Salad III

My ex's family was from Germany & used to make this but I didn't have the recipe. Found this one & it turned out awesome; very authentic. I doubled the sauce & used apple cider vinegar as others suggested. I'm so excited to have found this recipe!!

Italian Confetti Pasta Salad

After making this salad for a reunion over the weekend, I'm a little surprised it got such good reviews. I didn't care for all the basil even after I paired it down a little. My boyfriend, sister, and Mom didn't care for it either.

Baked Asparagus with Balsamic Butter Sauce

This recipe was just so-so for me. It was my first asparagus recipe & I didn't trim them quite enough. But I think it would've tasted the same by just cooking in water with a few shakes of balsamic vinegar at the end.

Cajun Shrimp Orecchiette

My boyfriend & I thougth this was very, very good. Althougth I made a couple small changes, I still gave it a 5 stars. I used 1 1/2 T butter & 1 T of olive oil when sauteing, used 1 can of Hunts petite diced tomatoes instead of plum, and added 2 T tomato paste to thicken. Very easy & had a great kick. I can understand why its too hot for some people but we love hot & spicy.

Savory Garlic Marinated Steaks

This recipe is great just the way its written. I didn't have any liquid smoke but think it would make it even a little better. We did 2, large sirloin steaks & still had plenty of marinade. Other reviews are right, its restaurant quality.

Garbanzo Bean Salad II

I had never done anything with Garbanzo beans & happened upon this recipe. Me and my boyfriend really enjoyed it. I used cucumbers instead of celery & halfed the amount of dill because it seemed like alot. It was zesty - great sidedish for summer.

Chicken Cordon Bleu II

This was my 1st try making chicken cordon bleu & I was a little intimidated but this recipe with very easy & turned out great. Me and my boyfriend loved the sauce. I also cut the chicken in half instead of pounding it out. I may add a little more ham & cheese next time. Its great though.

Beef Enchiladas II

I've made this recipe several times now & I love it. I did take the suggestion of others though & cooked my hamburger in Taco Seasoning first. Its also very good reheated. I'm going to try it with chicken the next time.

Lasagna Roll-Ups

I tried this recipe a couple days ago & had never made lasagna before. My family really liked it and its simple. I made it to serve 4 & followed exactly except I also added a little Italian seasoning. Cayenne pepper gives it a good kick.

Cottage Cheese Spinach Chicken

Made this dish last night & my boyfriend & I both really liked it. I took some of the suggestions from the reviews. I sauteed spinach, onions, 2 cloves of garlic & then added that to cottage cheese & 2T of cream cheese mixture. I didn't have cajun seasoning so just put Seasoning Salt on the chicken. I also just cut chicken in 1/2 & filled them that way. Put extra on top & topped with shredded mozzerella at the end. Also baked for about 40 min. at 350. Its very easy & a definate keeper!

Cream Cheese Ranch Potatoes

I cut this recipe in half & everyone really enjoyed it - even our 8 yr. old who's pretty picky. It has a strong ranch flavor and is very good reheated. I'm going to play around with it though to see if I can make it a little healthier but thats the only downfall.
