Easy Meatloaf

I love this recipe. I've saved it for the past year and made it my exclusive "standard meatloaf" recipe. I add veggies to it and make it with 3 lbs of ground turkey now. My boyfriend eats meatloaf sandwiches with the leftovers, so I make this same recipe, doubled, (except same 1 cup of milk), and add a green bell pepper, half a yellow squash, and a handful of baby carrots. It's absolutely awesome.

Grilled Chicken with Rosemary and Bacon

HOLY !!! Um.. SERIOUSLY... BEST chicken that's ever come off my grill. I dont like bacon, and I dont like rosemary, but this was FANTABULOUS!! I will be making this as often as possible. Oh, and I didnt have fresh rosemary, so I used dried rosemary and it was still perfect. The best part is all I have to keep on my grocery list is bacon and chicken. Garlic powder and rosemary are always in the cabinet. THANK YOU SKOO!!!

Banana Nut Bread III

Perfect!!! USed this recipe because the others all called for sour cream and I didnt have any at the time. This was delicious. Of course I had to make some modifications with what I had so I'll list them here, but they were minor. I used 1 1/2 cups of bananas instead of 1 cup, and added some cinnamon ( 1 1/2 tsp) and along with the vanilla extract, 1 tsp of rum extract. I baked it in two 8 x 4 loaf pans as directed. Perfect, perfect, perfect. Thanks Leslie!

Grandma's Lemon Meringue Pie

This is THE recipe. As long as you know how to do meringue (i.e. warm pie shell, warm filling, then top etc) then this is it. The filling is perfect b/c it's not that mucky sweet stuff you buy in the store or find in some recipes. It has some tartness to it, which, if we're being frank, is what MAKES a lemon meringue pie what it is! Thanks so much for posting this recipe. Oh, and by the way - my dad who is a pie lover told me that this pie was better then his own mothers - and my dad just doesnt say stuff like that! I almost cried. Again - THIS IS IT!

Flatlander Chili

Wow! I am not usually a big chili fan, but this is GREAT chili. I think this would win awards. The only differences in my version were: I used a food processor to chop the onion and the celery b/c my kids wont eat chunks of onions in anything. I omitted the green pepper only b/c I didnt have any. I didnt realize Iw as low on chili pepper - I only had about 1/8 cup instead of 1/4 cup and was afraid this would ruin the chili, but it didnt. NExt time I'll use the whole 1/4 cup but really, 1/8 was fine! Oh, and I used ground turkey b/c we dont eat a lot of red meat. GREAT chili. Thanks for posting!!!

Butter Icing for Sugar Cookies

This is a great recipe for icing. Of course, the poster should have listed that they were using IMITATION vanilla. If you use the real thing, like me, dont use so much. Also, I like to make a batch with a little vanilla and a little lemon. Lemon extract on sugar cookies is the best! Thanks for this recipe - easy, fast, good.

Sweet and Sour Pork Patties

Oatmeal Chocolate Chip Cookies I

I used all shortening (not butter/shortening) and it did two things. First, it made these cookies the most amazing homemade cookies in the world! and Second, made me feel REALLY guilty for eating so many!! All that shortening!! AAAACK!!!! These are amazing.

Fruited Curry Chicken Salad

Not bad! Except, I used a red onion instead of a regular onion and I assume this is what gave the salad a WAY TOO STRONG onion taste. So dont use red onion. (oops!) I plan on making this again w/ regular onion, and cutting downt he onion just in case!

Cheese Fondue

This is hands down the best cheese fondue recipe I've ever used. It's all about the Gruyere cheese. Amazing!!! I was tempted to stand over the pot before my guests arrived and eat the entire thing. I did mix the flour w/ the cheese before putting in the pot as someone suggested. I had no problems with lumps.

Pesto Tuna Salad with Sun-Dried Tomatoes

I dont know if it's just me or what.. this recipe got such great reviews - but I think i'ts just okay. It's a little on the weird side actually - I doubled the tuna b/c everyone seemed to say it was too much pesto, so I did 2 cans of tuna with the 1/4 c pesto and doubled the mayo (used miracle whip) and the parmesian. I didnt really like it, so I added about 1/8 more c of the pesto which was still less than the recipe called for if doubling - still not really great - added some garlic - still not there - then added more parmesan - it was better... but still - just okay. I can eat it, but i know my husband wont like it. At least it's healthy (used light m.w. and dried tomatoes instead of in oil) so it makes a decent "different" snack or light lunch.

Easy Whipped Cream

This tasted too much like sour cream. I made two batches. One with 1/4 c of sour cream and 3/4 cup heavy cream and one as the recipe stated, 1/2 and 1/2. The one with less sour cream was MUCH better.

Cranberry Gelatin Salad

I made this for thanksgiving this year. I used whole cranberry sauce instead of jellied and cherries. I couldnt find cranberry jello as reviewers suggested, so I used the cherry as in the recipe. I also made the tangy cream cheese topping as suggested by a reviewer - this is what I think made the whole thing. If I hadnt made the cream cheese icing for it, I think it would have been just a plain cranberry salad - nothing spectacular. But people did like it w/ the cream cheese icing... may or may not make again.

Cherry Chicken Lettuce Wraps

This was a good recipe. I had to use raisins b/c I had no cherries or craisins, but I'll make it again with dried cherries. The raisins are good, but make it more sweet. I bet the slight tartness of cherries would be even better. My kids, however, did not like it, but that's kids for you. We used iceberg lettuce. Bibb lettuce is my favorite for wraps but I didnt have it. But this is a keeper! I did have to make an extra batch of sauce to put on top of the mixture when serving. But that may be b/c I used slightly more chicken than the recipe called for. Regardless, making more sauce is a no brainer and it's nice to add it after you pile the chicken on to the lettuce leaf.

Chicken Boston

This recipe was frustrating and then wasnt worth it in the end. I read such great reviews, so I made it tonight. I used chicken breasts (boneless) and drumsticks instead of a whole chicken. The potatoes and sauce I kept exactly the same. After baking for the recipe's 40 and 15 minutes, I had to bake another 35 minutes until the chicken was done. Then the potatoes were still not done, and I even cut them in quarters instead of halves, so they should have cooked even faster. THe sauce in itself has a great flavor. I love the combination. But it didnt really get into the chicken much (maybe it shoudl be marinated first?) and the chicken was SO moist - it was TOO moist. I think these should be browned first b/c the chicken is almost soggy. I think this sauce is a keeper, but it just cant be baked the way it says in the recipe in my opinion. If I choose to use the sauce again, I'll use it with a pork tenderloin, or marinate the chicken in it, and then brown the chicken first before baking it. I'll also bake at 325 first, instead of 300 before upping it to 375. And the potatoes will be separate next time - or cut in even smaller pieces. Too bad! Looked good.

Tangy Sugar Snap Peas

I tried this recipe tonight starting with frozen peas. The peas are *okay* with this sauce on them, but really much better just steamed. I felt like I wasted a bag of sugar snap peas! Wont make this again.
