Alfredo Sauce

This is a great Alfredo sauce. I halved the recipe because I made it just for me. Only used parmesan, added fresh chopped garlic and black pepper. Perfecto!

Banana Banana Bread

I love this recipe. I have made it a few times now and everyone always loves it. I add chopped pecans, brown sugar, and cinnamon to the top before putting it in the oven. It makes a delicious crunchy topping.

Fresh Cranberry Relish

This was just great! I will reduce the sugar a little bit next time. Everyone loved it as is, including my boyfriend who loves the canned cranberry sauce. Personally I liked the very orangy taste, and you can still taste the cranberry. Update: When I first made this recipe it was different. There were no apples, pineapple or mandarin oranges. Maybe it was a different recipe. Anyway, the recipe I have been using it one package cranberries and one whole navel orange ground in a food processor adding sugar to taste. Remember that is will get sweeter the longer it sits so be conservative as first. I also sometimes add freshly ground ginger to taste.

Crustless Spinach Quiche

Sherry Sour Cream Chicken

I did make some changes but this was delicious!!! I pounded the chicken breasts flat first and seasoned them before sauteing them. I used dried tarragon (in place of rosemary), thyme, salt and pepper to season the chicken. Browned the breasts on both sides and then continued cooking. Added roasted garlic and onions to the pan. Once I thought the chicken was cooked through (maybe 10 min) I removed them and deglazed the pan with the sherry then added the sour cream. I put the chicken on top of egg noodles and poured the sauce over them. Doing it this way made it quick as well as delicious and used less dishes. I will definitely make this again!

Quick Angel Hair with Basil Cream for One

I thought this was good but not spectacular. It was a little bland to me and tasted a little too much of parmesan. If I make this again I will whisk in an egg yolk like I do for Alfredo, add some tarragon, and more butter for sure. I'll saute some mushrooms in the butter with the onions first, before adding the garlic. It's a decent recipe but needs tweaking to suit me. My boyfriend liked it just fine so I gave it 4 stars.

Kimberly's Meaty Meatloaf

I am giving four starts because I didn't think it was great but I changed the recipe according to some reviews. I think it would have been better if I had stuck with the original recipe. I don't think it would be fair to rate the recipe poorly since I changed it. However, one problem I had was that the loaves stuck to the pan really bad. I had to cut the loaves in half so I could get a spatula under them to turn them over without them falling apart. I used tomato sauce as someone suggested, as well as Worcestershire sauce and parmesan cheese. The tomato sauce was the big mistake, I just did not go with the flavor of the meat IMO. I will try this again but will use tomato soup.

Brown Sugar Meatloaf

We thought this was very very good! I followed the recipe except I had to use crushed stuffing because I didn't have saltines. I will make a change or two next time I make it though. I thought there was too much sugar, next time I will use 1/4 cup of brown sugar, and will add some chopped garlic. Other than that I will definitely make this again!

Black Beans and Rice

I made this tonight for dinner. I'm giving it four stars even though we were not that impressed. I think it would have been much better if I had used the amount of cumin the recipe called for instead of doubling it as someone suggested. It was much better with a little shredded Mexican cheese on top. I only used one and a half cups of beans which I feel was plenty. Next time I'm going to try adding cilantro and diced green pepper. We thought this would be pretty good on tortillas with some avocado and a dab of sour cream so we'll try that.

Salmon Patties I

I'd never had salmon patties before this recipe so I had nothing to compare to but I really did not enjoy them one bit. My boyfriend thought they were alright so I'm giving it three stars. The only changes we made were to add a little black pepper and garlic powder. If we try these again we will have to make a lot of changes, starting with reducing the onion, possibly adding another egg and using a smoked salmon fillet instead of canned. The canned salmon is the biggest downfall of this recipe in my opinion.
