Cheeseburger Pancakes

Reviewed: Feb. 6, 2009
This was incredibly good. I was a bit skeptical, but after reading the other reviews, decided to go for it. My husband was a bit leery at first, and although I don't think it's his new favorite, he did end up liking it. My 20-month-old daughter even liked it, which is the true test. I served it with Secret Burger Sauce and brussels sprouts. Very good. Looking forward to leftovers today, since the recipe makes a big batch for a family of three, and they are quite filling.

Secret Burger Sauce

Reviewed: Feb. 6, 2009
This was very tasty, just like the sauce on a Big Mac. I added a bit of mustard and paprika, like a previous reviewer suggested, and served it with Cheeseburger Pancakes, which is also excellent.

Pork Chops for the Slow Cooker

Reviewed: Feb. 20, 2008
This is the best recipe for pork chops that I have tried so far. My mom never made pork when I was growing up, so I always have a hard time knowing how to cook it. This recipe is FABULOUS! I only had 3 chops, but used the same amount of sauce and cooked for about 6 hours total - 2 hours on high, the rest of the time on low. By dinner time the meat was literally falling off the bones, and it was SO tender. We could have eaten it without a knife. Highly recommend this recipe.

Pumpkin Black Bean Soup

Reviewed: Feb. 20, 2008
This was really good, although I did add a few more spices, as some other reviewers suggested. I added some coriander and turmeric, which made a different and delicious combination with the ham. I forgot to add the tomatoes, and didn't puree any of the beans. Used dried beans that I quick-soaked and cooked, and they were already fairly mushy, so I didn't feel like I needed to puree them. Served with chopped avocado and sour cream garnish, and corn muffins on the side. Delicious!

World's Best Lasagna

Reviewed: Feb. 17, 2008
This is a really great recipe. The Italian sausage really gives it a nice flavor. I think I'll try hot Italian sausage next time, just to see how it is. I used reduced fat cheese and ricotta, as well as whole wheat lasagna noodles, and nobody could even tell! This will be my staple lasagna recipe from now on. I followed the instructions of some other reviewers and soaked the noodles and didn't simmer the sauce, then let it sit in the fridge overnight. Definitely saves a lot of time.

Caramel Shortbread Squares

Reviewed: Dec. 18, 2007
These were SUPER good. In another review, someone said they taste like a Twix bar, which is absolutely true. I made a double batch in a 9x13 foil-lined pan, which worked great, although I accidentally used 1.5 cups of butter rather than 1 1/3. I let the crust cool in the fridge for a while after it baked, then cooled the caramel layer until it was set, but still slightly warm in the center. The chocolate didn't quite cool all the way before I had to cut them, but it still worked. I got about 7 dozen out of this, but I also cut them really small. GREAT recipe.

Cranberry Orange Loaf

Reviewed: Dec. 7, 2007
This bread is EXCELLENT. Good texture and lovely tast combination. I don't have a zester, so I used my vegetable peeler to peel off the zest then chopped it. I also juiced the oranges, and made up the difference with regular orange juice. The recipe DOES say to chop the cranberries, which I did. I can't imagine not doing that. This would be good with a glaze, although it certainly doesn't need it. I will definitely make this bread many more times!

Outrageous Chocolate Chip Cookies

Reviewed: Dec. 3, 2007
These are excellent cookies. The only thing that is too bad is that this makes a small batch...although that's better for my waistline! The peanut butter taste is perfect (I used Skippy Natural Creamy) and the texture is very nice. Could maybe use a bit more oatmeal, or use rolled oats instead of instant, which is what I used. Fantastic recipe!

Candy Turkeys

Reviewed: Nov. 16, 2007
My family makes these every year, but instead of the carmel candy, we use chocolate-covered cherries. Put the cherry on it's side, though, with the flat part facing the striped cookie.

Chocolate Zucchini Bread I

Reviewed: Sep. 23, 2007
This bread is fabulous. The first time I made it, I followed the recipe, but substituted half of the oil for applesauce. It was VERY good. This time, I didn't have chocolate squares, so I used cocoa powder instead, adding it with the dry ingredients. I thought it was even better this time. The chocolate was more even, instead of getting chunky like it did before. This is an amazing recipe!

Fettuccine with Sweet Pepper-Cayenne Sauce

Reviewed: Sep. 14, 2007
I probably should have read the reviews first. This was REALLY spicy. My husband liked it okay, but I was definitely sweating! Also, I forgot to add the cheese before mixing with the noodles, so we just put it on top. The sauce was pretty runny, also. I added some mushrooms with the peppers, so that could have been why. Anyways, it was okay, but if I make it again I will definitely do some tweaking.

Zucchini Brownies

Reviewed: Sep. 9, 2007
These were really good, although the advice from other users was helpful because I wasn't so sure about them when I was mixing them. I replaced about half of the oil with applesauce, which worked well, although they were a little more cakey than i was expecting -- maybe due to the applesauce. Took these to a potluck and they disappeared pretty quickly!

White Chocolate Macadamia Nut Cookies IV

Reviewed: Sep. 4, 2007
These were REALLY good. Tasted just like the Mrs. Field's kind that was my favorite as a kid. I froze most of the dough, but the few that I baked turned out perfectly. I only wish that this recipe made a larger batch.

Mama Bear's Porridge

Reviewed: Apr. 26, 2007
This was definitely the best oatmeal I have ever eaten. I did change the recipe a little, though. Since I was only making two servings, I halved the recipe, but used a cup of oats (I only had quick-cooking), added nutmeg, and only used one egg (how are you supposed to put in half an egg??) The result was excellent, and my husband liked it, too. Will definitely make this many more times.

Amazing Whole Wheat Pizza Crust

Reviewed: Jan. 17, 2007
The recipe gave me two thin-crust pizzas, which I partially baked before adding the toppings. We had ham, pineapple, green peppers and mozarella this time, but will definitely try others as well. I froze the other crust. Definitely a great recipe. My husband and I each at half of the pizza! Definitely the best pizza we've ever had.
